Zucchini Casserole Keto low carb with Michael’s Home Cooking

I’m going to make a small zucchini
casserole this is low carb keto
approved diet using 2 zucchinis might
use psyllium husk I’m going to use heavy
cream nutmeg thyme some parmesan some
Gruyere butter and that’s 1 clove of
garlic salt pepper let’s get going I
have a small pot on my stove I’m going
to add a tablespoon of butter and the 1
clove of garlic and I’m going to turn
the stove on now and cook the garlic
just a little bit I like to start off
this way so you’re less likely to burn
the garlic
well the garlic is starting to get
slightly golden eat some of it is so I’m
gonna turn up the heat I’m gonna add 1/4
teaspoon of thyme leaves 8th the
teaspoon of the nutmeg I’m gonna go
ahead and use psyllium husk I don’t have
much experience with this I’m going to add
a half teaspoon and then the cream 3/4 of a
cup and we’re gonna bring this to a boil
and see if that a psyllium husk will
thicken this now I’ve made this before
but I didn’t put very much psyllium husk
in it it was fairly thin but it was
still so good I mean really really good
so anyway this turns out this is a
delicious dish I guarantee so we’re
gonna bring that up to a simmer alright
this has come to a boil
it didn’t really thicken so I added one
more 1/2 teaspoon of the psyllium husk
and I can tell it’s thickening so I want
to take it off the heat
no I’ll leave it there but I normally I
would take it off the heat I turned it
off I’m going to add 1/4 cup Parmesan
and 1/2 cup that 1/2 cup of the gryuere
and stir that in this is our sauce or
yummy very good sauce I have about half
of the zucchini in my pan I sliced it
1/4 inch 1/4 inch thick I did use a
mandolin to make it easy a little salt
over the zucchini soft on the zucchini
and a little pepper
and about half of the sauce
I think the sauce is a little bit too
thick I’ve made this before and the
sauce was pretty thin now this time it’s
thick but it was delicious
you know I know it’ll be delicious this
way to put some sauce on there and put
another layer of zucchini I had my last
of my zucchini on there put some salt
you really do need the salt here and
some pepper and the rest of the sauce
sorry I’m making it kind of blind for
you here
I can smooth that sauce out
I’m gonna bake this at 375 but before I
cut it in half about 1/4 a cup of
Gruyere hair to put on top just kind of
distribute it out evenly now into my 375
degree oven here it is I’ll be yelling
it bake for 25 minutes at 375 just need
let it cool off a bit we’ll have a taste
this whole dish has nine earth 18 carbs
so if you eat half of it it’s 9 carbs if
either third of it 6 carbs it’s a
glorious wonderful full flavored side
dish is just like indulging and it’s
beautiful it’s wonderful
it tastes so good
