Vegan Almond Cheese – Mind Over Munch Episode 31
Hey fit fam, do you love cheese? Me too, I
wish I could put it on everything. You might
be thinking, I’m vegan, I’m lactose intolerant,
I just don’t digest cheese that easily,
how can I enjoy the cheesy deliciousness?
I’ll give you a hint, look into my eyes.
Today I’m going to show you how to make
almond cheese. Sounds like an oxymoron, I
know. We can make almond milk right, maybe
we can make almond cheese too.
Start by soaking your almonds in water overnight.
The next morning, peel the skin off those
babes. Sometimes they pop right off and sometimes
it’s a pain but trust me, it will be worth
it. Pour your peeled almonds into your food
processor along with olive oil, lemon juice,
garlic, salt and pep and a little water. Blend
until it reaches a nice smooth consistency.
Place a strainer over a large mixing bowl
and lay on a couple of layers of cheese cloth.
Pour your almond cheese into the cheese cloth
and wrap it up. Transfer to the fridge for
12 hours or overnight. Once removed, it should
be a thicker pastier consistency. Your almond
cheese is ready for devouring, unless you
want a rind that is.
To add a rind, place your almond cheese ball
onto a baking sheet lined with parchment paper
and spray it. Mold it however you’d like,
I squared off the edges of mine so it resembles
a wheel of brie. Place in an oven preheated
to 300 degrees Fahrenheit for 30 to 40 minutes.
And there you have it a delicious, nutritious,
all natural way to satisfy your cheese craving.
Vegan and dairy free, enjoy as a spread, as
a ricotta substitute or just plain. For this
