Tuna-stuffed Avocados with Corn Salsa

Tuna-stuffed Avocados with Corn Salsa
Remove the kernels from two ears of corn
Add one tablespoon water, cover, and heat in microwave until cooked, about one to two minutes
Chop one tomato
Chop half cup cilantro
Chop two tablespoon red onion
Chop one tablespoon jalapeno
Combine all vegetables in a medium bowl
Add two teaspoon lime juice
Stir to combine
Set aside to allow flavors to mingle
Chop half cup celery and add to bowl
Add one pouch chunk light tuna in water
Stir in one-third cup fat-free plain Greek
yogurt
Add quarter teaspoon of pepper
Add one tablespoon lemon juice
Add to corn salsa
Halve and remove pits from three avocados
Drizzle lemon juice over avocados to prevent
browning
Spoon tuna mixture tightly into each avocado
