The Best Keto Pound Cake – Like Sarah Lee, but only 4g net carbs

and in this video we’re gonna make a
keto friendly pound cake but before we
do that we’re gonna preheat our oven to

this recipe was submitted to me by one
of my Instagram followers John Peters
and I took his recipe and tweaked it
just a little bit has changed around a
couple of ingredients and what I got my
wife said tastes just like Sara Lee
pound cake now that might be a little
bit generous but it’s a darn good pound
cake starting with our dry ingredients
we have three cups of almond flour 1/4
cup of sweetener I’m gonna use bogus
wheat you can use swerve 1/2 a teaspoon
of baking powder 1 teaspoon of xanthan
gum and a pinch of salt we want to mix
the dry ingredients together first to
ensure that that xanthan gum gets
properly dispersed
separately we’re going to mix our wet
ingredients starting with one cup of
heavy cream 1 tablespoon of olive oil 1
teaspoon of vanilla extract 3 large eggs
1 tablespoon of melted butter 2 packets
or about a quarter cup of performance–
nut butter you could also use the keto
perfect nut butter or any macadamia nut
butter the zest of one lemon
and the juice of one lemon mixed
together
then we’ll add it to our dry and mix
grease an 8 inch loaf pan you use butter
I’m using coconut oil spray then pour in
your batter it’s gonna be kind of thick
almost like cookie dough
not quite somewhere between cookie dough
and cake dough so you’ll have to work it
with the spatula then I bang it on the
counter a couple times to flatten out
the bottom and then I wet my fingers and
just kind of flatten it out it doesn’t
have to be perfect but once you get it
fairly smooth and enough tucked into the
corners we can put it in the oven now
the total cook time on this will be
between 50 and 60 minutes but we’re
going to come back in about a half an
hour and check the top and if it’s
starting to brown we’re gonna put some
foil over it 30 minutes in the top is
looking fine we’ll check on it again in
another 15 at 50 minutes I’m liking the
look of this color on top but let’s poke
it and see if it’s done my skewer came
out a little bit moist so we’re gonna
put this back in the oven for probably
another 10 minutes after I top it with
some foil
all right it’s been 60 minutes whoo that
looks pretty we’re gonna let this sit
for at least a half an hour before we
run a knife around the edges to pop it
out
we’ll run a knife around the outside
edge and hopefully this will pop right
out and it did so we’ll move it to a
cooling rack until it is cooled
completely that’ll probably take another
hour to hour and a half we’ll plate this
up with some of my pistachio pudding it
hasn’t fully set because it needs to
rest overnight so it’s gonna be more of
a sauce this time around some 90% cacao
chocolate and a sprinkle of chopped
pistachios
pretty amazing flavors so great
the texture of the pound cake is awesome
overall eight plus so there you go a
great keto pound cake topped with a
great sauce this dessert will wow even
your non keto friends and family if you
decide to use performance nut butter in
