The Best Chicken Mozzarella – 5 Ingredients!
– Hey guys, today on
Low Carb with Jennifer,
we are going to take about, let’s see,
one, two, three, four,
five ingredients and we’re
going to turn it into
a one pot dinner.
It’s mozzarella chicken.
It’s super easy and you can find the link

So I’ve got two chicken breasts here.
And I’m going to cut
them in half lengthwise.
Just like, so their easier to cook.
They don’t take as long and they don’t
dry out usually, I don’t know.
Just something about thick chicken breast.
They just are not as good.
The flavors, they don’t
get into the chicken.
They’re just not as flavorful.
So I like to cut the chicken
breast in half, lengthwise.
With a sharp knife, just like this.
So now, we can season our chicken
with some salt and some pepper
and some Italian seasoning.
This is my chicken hand.
I’m gonna try not to touch
anything with my chicken hand.
Oh but I don’t think it’s gonna work.
Okay I gotta wash my hands.
Okay my hands are chicken
free and I can use some tongs.
So I’ve got some salt.
So I’m just going to, generously
season these with salt.
And Italian seasoning.
Okay, and we can flip ’em
over and do the other side.
Okay we seasoned our chicken
and now I’ve got a skillet here
that I’m getting hot over medium high heat
and I’m gonna add in some avocado oil.
And we’re gonna cook the chicken,
brown the chicken on each side,
until they’re brown.
And then I’ve got a plate here
that I’m gonna remove them
from the pan into this plate
so we can finish off
our mozzarella chicken.
That side is nice and brown.
I’m gonna flip these.
Guess what, sometimes you
have to move them around
to get them evenly cooked.
Like this one is still,
you know, raw right here.
But this side is brown.
So I’m just gonna turn it to where
flip it around so that
it’ll cook more evenly.
It’s just the same with this one.
But that center one, will cook of course,
it’s right on the center of the burner,
will cook a lot more
evenly than these other.
And you don’t wanna cook
these all of the way through
because they’re gonna
cook some in the oven
and that will just result in
over cooked chicken breast.
And that is like my least
favorite thing in the world.
So I can move these around to the center.
And get brown on the other side.
Okay we’ve got our last
piece of chicken all brown.
We wanna move this out of the way.
Okay here’s the skillet that
we cooked the chicken in.
Here’s our nicely browned chicken.
Now I’m gonna pour some marinara sauce
into this hot skillet.
And this is the Raos Marinara.
It’s my favorite marinara sauce.
We’re only gonna use,
ah well, we might as well use all of it.
This is a 24 ounce jar.
Oh man that smells good.
So I’m just gonna use, oh oh my.
I’m gonna use my tongs
to scrape the bottom.
Those browned bits from
the chicken on the bottom.
That gives a lot of flavor to our sauce
and Raos, you know, it’s already
such a good sauce.
You really can’t get any better than Raos.
Okay now, we can put our
chicken back into the sauce.
And I’ve already preheated my broiler.
I have my broiler on high
because we just need the sauce
to get a little bit hotter
and the cheese to melt.
That’s all we need.
Okay, let’s put some mozzarella cheese
on top of this chicken.
And it will be ready for the broiler.
And before I pull this from the oven,
I will make sure that each
of these chicken breasts
are 165 degrees Fahrenheit,
with a meat thermometer.
Also I’m gonna put a little bit more
Italian seasoning on top, just
for some more Italian flavor.
Okay this is ready for the broiler.
Okay here is our mozzarella chicken.
They are perfectly cooked and
oh, oh my gosh, look at that.
That looks so good.
And this will be perfect served
with some zucchini noodles,
squash noodles or your favorite
substitute for pasta.
You could use spaghetti squash.
