Super Crispy Pata Recipe with Yummy Sawsawan – Panlasang Pinoy

Welcome to Panlasang Pinoy
Today we’ll be cooking Super Crispy Pata
together with a delicious dip
here are the Ingredients we need
“pata ng baboy”
dried bay leaves or “dahon ng laurel”
onions
garlic
whole pepper corn
and knorr liquid seasoning
this is the original flavor
aside from this we also need water
and peanut oil
and here is the complete list of our ingredients with their measurement for our Crispy Pata

Are you ready? Let’s start
put the “pata” in a cooking pot
we just have to put all the ingredients here
here goes the red onions
you may use either yellow or white onions
put diced garlic
here goes the dried bay leave or”pinatuyong dahon ng laurel”
and then put the whole pepper corn or “pamintang buo”
add water
make sure that the water is just right to cover the “pata”
put into stove
at this point, turn on the stove

then put the pot
cover cooking pot
bring to boil
it is now boiling
cover this again and continue boiling under medium heat for an hour or until “pata” is tender
after an hour
the “pata” is now tender
remove “pata” from the pot
transfer into a clean plate
cool it down
until it’s manageable
season “pata” with Knorr liquid seasoning
this step usually uses salt and soysauce as a seasoning
but now I’m using Knorr Liquid seasong for a complete and delicious flavor
this helps in making our crispy pata delicious
just make sure that all sides are seasoned
rub it all over
rest for 15 minutes
It’s enough time for the meat to absorb the seasoning
after 15 minutes, pat dry using a paper towel
and then we may now deep fry this
preheat peanut oil in a pot under 320F
deep fry our “pata”
be very careful,as much as possible ready the lid
this will serve as our shield from splashing oil
chances are, oil will splash right away
cover cookingpot with a little bit of space open for the steam to escape
or you may use a splatter screen
so the steam coul eveporate while the oil splashes
deep fry for 12 to 15 minutes of until bottom part is crispy
now flip the “pata”over
do the same procedure
deep fry the other side for 12 to 15 minutes or until crispy
cover again to avoid splashing oil, be very careful while deep frying
at this point, the “pata” is now cooked, this is now crispy
just like the regular “crispy pata”
remove from the cooking pot
transfer to a plate then cool down for 15 minutes
then we wil double fry this to be crispier
put it back in the cooking pot
just make sure that the oil is under 320F
deep fry for 5 to 8 minutes
then flip it over and cook the other side of the “pata”
double frying Crispy Pata helps in making this crispier
after 5 to 8 minutes, remove the “pata” from the cooking pot
put in a plate with paper towel
so the oil could be absorbed
then let it rest for 15 minutes
let us now start making our delicious dip
put vinegar in a bowl
we are using regular white vinegar from the market
put a little bit of sugar
about 1 tbsp granulated white sugar
mix until sugar dissolves
usually, some add soysauce to this
but I am using knorr liquid seasoning
before I do use soysauce for this until I discovered that Knorr liquid seasoning will do
this makes our dip so flavorful
since then, I do use this
here goes our onions
I’m using red onions
but you may use either yellow or white onions
here goes the garlic, minced so we could easily get it’s flavor
here goes the scallions or “dahon ng sibuyas”
we will also add ground black pepper
and if you like this spicy, we’ll add something later, let us just mix this first
and now let us add cracked pepper flakes
but you may also use fresh chopped chili
this is now ready
let us now serve the Crispy Pata with it’s dip
