Sugar Free Sweetened Condensed Milk | Keto Recipes | Keto Dessert

In creating or converting some classic recipes, there are some important ingredients that seem to be an integral part of the recipe,
but don’t appear to have an easy keto conversion. One of these ingredients,
which I use and I’m going to show you how to make right now, is my sugar-free sweetened condensed milk.
I assure you this recipe is very easy to make, but will take a bit of your time. The macronutrient ratio for this
sugar-free sweetened condensed milk is seventeen point seven to one, with 1.5 grams of total carbs and
1.5 grams of net carbs,
per 20 gram serving. As you can see, this is like a fat bomb all on its own
One of the benefits of this very easy recipe is it only has four ingredients and, as I mentioned already,
only requires a bit of your time and attention
The first order of operation is to set your stovetop heat to medium-low
then pour your heavy cream into your pot and
at the same time, also add the confectionery sweetener. Then stir to dissolve the sweetener as the cream is warming up
Even though I’ve made this recipe quite a number of times,
it just occurred to me that, since I want the water content of the cream to evaporate,
it might be a good idea to transfer this into a frying pan because of the greater surface area
So that’s what I’m about to do. I guess I could have done this right from the start, but lesson learned
Now that I’ve transferred the liquid, bring the liquid to a light boil in the frying pan
Then reduce the heat a bit and continue cooking at a simmer for about 30 minutes
I cannot emphasize enough that you must stir frequently while the cream is being reduced and begins to thicken
Please note that while you’re simmering you may have to control and adjust the heat
This is to prevent the cream from scorching on the bottom of the pot. While cooking this mixture,
I had to reduce or turn up the heat several times to keep it at a consistent simmer
And that’s why it’s very important that you stay near the stove as you’re making this recipe
it may seem a little tedious, but this sugar-free sweetened condensed milk is
so very close to the taste of the original Eagle brand sweetened condensed milk,
which is the brand we used to use before we went keto, and I think that you will really appreciate
the taste once it is done. In fact, my son Chris, who is a real foodie and a carbivore
said that he liked my sugar free condensed milk version more so than the Eagle Brand
condensed milk, and the reason, he explained, was that my version did not have an overpowering sweetness to it
He described my sugar free version as having a sweet taste that leaves a more pleasant and very light vanilla aftertaste
It’s been almost 30 minutes
and, as you can see, the cream and sugar mixture has condensed
At this point, the creamy liquid seems very thick and if you dip a spoon into it
it will coat the spoon very well
And as you run your finger along the back of the spoon, it will stay nice and clean
Now the sweetened condensed milk is ready for the next step which is to add the unsalted butter
Immediately after adding the butter stir until the butter is well blended into the cream mixture
Continue to simmer the liquid at low heat for about 1 to 2 more minutes
This will help the butter flavor to better infuse the cream mixture
And the last step is to turn off your heat and if you like remove the pot from the heat element
Now add the vanilla and stir until the vanilla is well blended and the liquid looks smooth and glossy
Then pour the condensed milk into an airtight heatproof container
And if you’re going to use your sweetened condensed milk the same day
Let it rest and cool for at least one hour in order for the flavors to develop better. Or, if you don’t need it
right away or don’t need all of it, seal your container or refrigerate until you need the sweetened condensed milk some other time
I would like to mention that this sweetened condensed milk will thicken up as it cools,
especially in the refrigerator. And, also like many other sauces and recipes, if you don’t need it right away,
and you can let the condensed milk rest overnight,
you will notice that the flavor will really develop even more, and really be at its fullest after 24 hours
I don’t know exactly how long the sweetened condensed milk will keep in your refrigerator
But I found that mine lasted very well for about two weeks
so, if you’re going to be making some for the same day that you’re going to be using, it make a double batch, because you’ll
be able to use it in some other recipe, like some of the ones I’ll be posting very soon
