Today, I will make ‘ Ketogenic Kimchi ‘.
Keto kimchi does not contain sugars (sugar, fruit syrup, etc.) or garlic or flour paste. 🙂
So it’s Kimchi that can be eaten by people who low-carbohydrate & low-sugar ketogenic diet.

Napa cabbage (3Kg for 1)
Please remove the tough, dirty outer leaves.
Cut the root of the cabbage.
Cut the bottom of the cabbage by a third,
then use your hands to sever the cabbage.
Cut in the lower part so that it is well salted.
I made small amounts, and I didn’t have a big bowl,
so I used a kimchi container.
Solar salt (total 600g)
Solar salt (total 600g) + Water 3L
Wet the cabbage evenly with salt water. 🙂
Sprinkle with salt inside the cabbage thick leaves.
Salt the cabbage within 8 to 10 hours.
Even the thick leaves are well salted:)
Rinse the cabbage under cold water 3 to 4 times.
Set aside to drain in a colander for 2hours.
Let’s make a paste for kimchi now!
White radish 1
3~4 handful of Green onions
Chopped ginger 2 TS
Water soaked in kelp 240ml
Korean anchovy fish sauce 6 TS
Salted shrimps 2 TS
Red pepper powde 400g
Apply paste to each cabbage leaf and add scallions and radishes inside 🙂
In order to make healthy, crisp Kimchi with Lactobacillus
that is still alive, chose ‘Low Temperature Cooling ripening mode’.
Let ripen for 2 to 3 days, then complete keto kimchi.

I was worried if I could make kimchi without garlic and sweet taste… but Wow! It’s tasty good_!
