Spinach Artichoke Dip Recipe – Low Carb Keto Appetizer

Welcome all! Papa G here. Today I present
low carbohydrate spinach artichoke dip. At only
three point eight grams of carbohydrates per
serving, it makes for a great tasting
low carbohydrate appetizer or snack. Let’s get
started. We’ll be using ten ounces of
fresh spinach for our recipe. Place the
spinach on a cutting board and give it a
rough chop; cutting into smaller pieces.
Now do the same with two 14 ounce cans
of artichoke hearts. In a large skillet
on medium-high heat add 8 tablespoons of
unsalted butter. To the butter, add 4
ounces of softened cream cheese; add 3
stalks of chopped green onions; and give
that a mix until the onions soften and
the cream cheese melts. Now add some
finely minced garlic and mix to
incorporate. Now we’re gonna add some
mayonnaise; and a little sour cream. Mix
thoroughly to combine. Once all the
ingredients have liquefied, we’ll add the
chopped spinach. It may look like a lot
at first, but it’ll cook down quite a bit
as we stir it in. When the spinach has
reduced down, add the chopped artichoke
hearts and give that a mix to combine.
Now we’ll season with some salt and a
little cayenne pepper. Give that a mix
once again. Now we’ll add our final
ingredient; about 1/2 a cup of grated
Parmesan cheese. Stir the cheese in until
it’s nice and melted. Now we’ll transfer
everything into an 8 by 11 inch baking
dish. Top with another 1/2 cup of
Parmesan cheese.
Now place in the middle of a preheated
350°F oven for about 20 minutes or
until heated through. While the dish is
in the oven, we’ll fry up some low carbohydrate
chips to go along with our dip. At only 5
carbohydrates per tortilla, we should be able to
get about 24 chips, making these chips
very low carbohydrate friendly. Heat some oil to
about 350°F and add the tortilla
pieces. It won’t take long; about a minute
or so per side. Remove and drain on a
paper towel. Add just a bit of salt and
toss to coat. Listen how crisp. When our dip
is finished baking, let cool just a bit. I
like adding a little dry chives to the
top. Serve warm and enjoy with the low
carbohydrate chips we made; or if you prefer, you
can use some celery; even pork rinds work great!
