Smothered pork chops Instant Pot | Keto pork chops!

making Keto smothered pork chops! these
are delicious, and if you’re not on a
keto diet you still want to eat these
they’re that good….
flavorful…. rich… we’re making them
right now

We post about twice a week. So let’s get
started with these smothered pork chops.
This is delicious…. the flavors just pop
with this recipe so for this smothered
chops we’re going to obviously have pork
chops…. I’m going to be going with about
four medium cut…. and these actually were
like really thick thick ones, I just
sliced them right down the middle and got
four out of them. We are also using a
yellow onion, I’m gonna use the whole
onion for this recipe, we want a lot of
onion. You could even probably double
that, I don’t know, but I do it with one
whole yellow. If you don’t have yellow on
hand try it with the white onion, but use
the whole onion for this recipe…. and we
are also going to be making this keto
friendly, so we’ve got some little twist
at the end that’s gonna make this sauce
perfectly creamy and delicious and keto diet
friendly, so let’s get started by
sauteing our onion. And actually I’m
going to cut it ….let me show you…. and for
this recipe you want a thinly sliced
onion, so we want to make it almost, if
you can, paper-thin.
Don’t stress over it ,if you want to get
through it quickly just to get them
sliced, but do try to go as thin as you
can. We want that so that this onion gets
really nice and soft and becomes a part
of the sauce at the end. So we’re not
gonna do any more chopping after this,
we’re just gonna cut them lengthwise
nice and thin…. in Italian you say “fine
fine…” that’s ….my mother-in-law says that
all the time: “fine fine…” We also for this
one want to use a little…. about a
tablespoon of olive oil for the sauteing
along with a couple of tablespoons of
butter because we want that
richness. So those are going to go right
into our pot…. how pretty these are….
we’re gonna go to saute on high so if
it’s on medium default to switch that to
temperature over to high and hit start ….and while
that’s getting warm, and our onions are
in there…. so we’re gonna get our butter
and olive oil in there. Okay those are
nice and salted…. okay now we will take 1
teaspoon…. this is a heavy teaspoon so I
like one and a half teaspoons of minced garlic and again if you’re using
a fresh garlic clove
you’ll use double that, so that would be
two cloves of garlic,
fresh cloves hand minced, or 1 teaspoon
of the pre-minced kind….. two tablespoons
of butter …..we’re gonna put right on in
there too and we’re gonna go with…. about
a tablespoon of olive oil. This is
getting hot, I can hear it ,so I’m gonna
get it…. stir to get that butter melted
down and don’t stress about the onions,
just get it as fine as you can and if
you don’t leave them in the long…strings,
that’s ok too
you can chop them however you like, because
at the end the onions are gonna change
completely anyway, so just get them in
there. The only thing is, don’t make them
real thick, that’s the only rule for this
one.
Once those are cooked a little bit, the
butter is all absorbed, that oil is all
in there with that garlic, then you’re
ready to hit cancel on your instant pot
You want to stop that heat, we will then
add our pork chops right on top so
that’s what we’re going to do, straight on in
okay one….. I’m just putting these right
on top of the onions. Two…..
I’ve cooked this before with the chops
that are super super thick and just took
a longer cook time so this time I’m
cutting them in half and make the chops
go a little bit further as well. So those
are in, so we are going to make sure that
there’s nothing stuck on the bottom
just give a give the chops a little move
around, which I ….shouldn’t be because we
didn’t cook it that long. Now
the next step would be to add a teaspoon
or a teaspoon and a half or so of a bullion
base mixed in about a quarter cup of
water so this is the only liquid that
you’re adding and this is the flavor of
a really good flavor booster so doesn’t
take a lot of water for this but make
sure that your bullion is nice and
dissolved in there or if you’re going to
use one of those cubes the little foil
wrap bullion cubes, same thing. Would be one
one of those cubes cubes dissolved in
about a quarter cup of warm water. That
water needs to be warm for you to get
it nice and dissolved,. I’m pouring it right on
top of our pork chops
okay okay
once that’s done it is time to get the
lid on. We are going to….. since these are a
medium cut chop, I’m going to go 12
minutes on my meat and stew, or your
manual pressure cook, whichever whichever
one your pressure cooker has. I’m gonna
go with meat and stew, I’m gonna change
this to 12 minutes. If I had…. was doing
something else…. maybe like searing it
then you would ….maybe you could do it for
less, but these are just going straight
in so we’re gonna go 12 minutes on the
medium cut. If you’re using a thinner cut
chop, go down to it between like maybe 9
or 10 minutes at the most.
So go 12 minutes on high, hit start we’re
gonna let this come to preheat come to
pressure it’s gonna go for 12 minutes on
sealing not venting, then after that 12
minutes is up,
allow a 10-minute natural release so
we’ll check on that as soon as these
chops are ready.
Okay, I have allowed ten minutes of a natural
release then I went ahead and did a quick
released the rest of it and let’s take a
look inside. Let’s see… okay, awesome!
Step two, and this is a quick step and
totally worth it so do this step, we’re
gonna take the pork chops out and set
them aside. We’re gonna make a delicious
smothering sauce here. So we’re gonna set
these aside. Now for this sauce, to make
this keto friendly, I’m adding between
three and four tablespoons of an almond
flour. To do this in a regular (non-keto) way I
would probably just add a teaspoon or
two of cornstarch or if you’re using
regular all-purpose flour about two to
three tablespoons of that, but for keto
friendly we’ll use almond flour and it
tastes delicious. Before it we do that, we
need to put this back on high saute
because we want that heat to pick it up
while we add the our sauce, while we add
our almond flour, so we’re gonna go back
down to saute and make sure you’re on
high and hit start….. and this is already
nice and hot, so I’m gonna add in ….let’s
start with three …..about three tablespoons
to three, and we’ll use a whisk and get
this going
I’m gonna stir this for probably about a
minute or so on that high saute, get that
flour mixture all dissolved in there, and
just let it mix really well with these
onions. The onions are gonna break up as
you do this and this sauce is delicious!
okay to the almond flour I also suggest
you add a splash of….I’m using half and a
half, you can use whatever cream you like
or whole milk, but half and half is what
I’ve got here…. just a splash does it,
maybe a tablespoon, I might add a little
bit more, we’ll see. When we turn the heat off
and it starts to cool it will continue
to thicken up and as this cools give it
a minute or so you’ll see that it
thickens up even further. So now if you
can see that, the onions have completely
just become a part of the sauce. You
don’t have any big bites of any in that
flavor is all in there with that
bullion base and the flavor of the pork
chops of course is in there, and that
butter and that garlic….. y’all this is
good stuff! All right, let’s let’s put
some of this on our chops, there we go, drizzle
this on here, you can see it’s already
thickening just from cooling off a little bit
Okay to add a little bit of
color to this dish, as delicious as it
tastes it’s kind of one color, which is
also okay but it’s nice have a little
pop of color on your plate. I suggest
capers. They are a great addition and add
that pretty little something…. I actually….
we love capers. They go on so many things
so beautifully, from pasta dishes to fish,
to all of it, and so I keep them on hand.
Just a few capers, not a lot and
you’ve got smothered pork chops
these are keto friendly and I mean
dinner let’s do it!
