Simple and Easy Low Carb BBQ Pulled Pork Keto

Welcome all! Papa G here. Today I present
something so simple, easy and delicious,
you’ll have no excuse not to make it. My
slow cook barbecue pulled pork. Also, a little something extra…
I’ll have my coleslaw recipe in the description below.

you say we get started…
We’ll start with a boneless three pound pork butt or
shoulder. Try and get one with a nice fat
cap on top like the one here. Begin by
seasoning the pork with your favorite
rub blend. Here i’m using my go to Magic
season blend. I’ll leave a link in the
description below if you’d like to try
it. Whatever you use though, just be sure
it’s sugar-free and MSG free. We don’t
want to spike our insulin levels.
Coat the pork generously with the rub. Be
sure to cover it completely. Now we’ll
place the pork butt in a slow cooker.
Place one stick of unsalted butter on
top of the pork. When you put the pork in
the cooker, be sure you have the fat cap on top.
Having it on the top will
accomplish two things. First, it will allow the
fat to render down all over the pork as
it cooks. The second thing, i’ll show you
in just a bit. Now you can secure the lid
to the cooker. Did I mention how simple
and easy this recipe is? Cook the pork on
the low setting for about eight hours.
When it’s done, you’ll see how magically
our fat has rendered keeping our pork
nice and juicy. Now with most of the fat
on top, it’s easy to remove. Just grab a
large spoon and remove as much the fat
as possible. Now drain the liquid from
the cooker and with a couple of forks
begin to shred our pork. Just keep
pulling it apart until the roast is
completely shredded. I like to add just a
little bit more of the seasoning mix to
the pork and then mix well. Next, add
one cup of my low carbohydrate barbecue sauce; adding
it a half a cup at a time to allow you
to judge the amount you want.

well; and we’re ready to serve.
