Hello all,
welcome to Dietitian’s Kitchen.
I’ll give you
a very special sauce recipe.
It’s called Romesco.
What’s special about this sauce?
It originated in Spain.
Fishermen in Spain
created this sauce to serve with fish.
However,
it’s not imperative to consume it with fish.
You can eat it with
pasta, chicken, and meat dishes.
Whatever you think
will complement this sauce.
Now, my first ingredient is
chili pepper.
First I’ll remove the seeds.
I’ll split it like this.
I took out the seeds.
I’ll put these
in the water.
I’ll wait for them
to get softer.
I need 3 chili peppers.
I put the peppers
in the water…
now onto the other ingredients.
Another main ingredient is almond.
Here, I have a cup of
roasted almonds.
I’ll put them
into the blender.
I preferred
to use my blender as I love it, but…
you can also use
a food processor.
We added
a cup of almonds.
To make it healthy,
we’ll add olive oil into our blender.
This sauce is pretty oily,
rich in calories.
But we use this sauce slightly.
Since you’ll add only
a tablespoon or dessertspoon of…
this sauce, it’d be no problem.
What’s more, all the ingredients
consist of healthy fats and nutritions.
I’ll add about
4 garlic cloves.
I’ll add
2 tablespoons of tomato paste.
I preferred paste today,
but you can use tomatoes as well.
Since it’s off season,
tomatoes are rather unsavory.
So, I felt like using tomato paste.
I’ll add about
3 tablespoons of vinegar.
I’ll also add 1 grilled red pepper.
Red peppers are particularly
rich in beta-caratone.
Thus, it’s really good
for eye health and protecting your skin.
After adding
1 grilled red pepper…
I’ll add
these soft chili peppers, too.
But be careful to wash your hands
after you touch chili peppers…
Do not touch your eyes,
as I did that mistake before.
It burns so much.
Now it’s time to grind them all.
I’ll add
1 dessertspoon of salt.
My sauce is all ready now.
I’ll pour it
into a pot like this one.
If you don’t want to
use it right away…
as there will be plenty of sauce…
you can store them
in a jar for about 3 weeks.
My sauce is ready now.
I’ll spread it all over my bread
with a knife, then…
I can have a bite.
It’s quite delicious.
If you wish to
