Roasted Broccoli With Bacon Jam – Low Carb Keto Recipe
Welcome all! Papa G here. Today I present
a recipe that tastes as good as it
sounds… roasted broccoli with bacon jam.
This savory and sweet recipe will make
even a broccoli hater into a broccoli
lover with just one bite – all with less
than three and a half net carbs per serving. Let’s get started.
Begin with a skilleton medium-high heat
and add 8 slices of diced bacon.
Cook until the bacon begins to crisp.
Remove the bacon from the pan,
leaving the rendered fat, and add 1 diced
onion to the bacon fat. Add just a pinch
of salt. Stir and cook for about 5
minutes or until they become soft and
translucent. Stir in some apple cider
vinegar and add a brown sugar substitute.
Mix to incorporate and cook for about 2
minutes. Stir in some brewed coffee and
when it comes to a boil, reduce the heat
to medium-low and simmer, stirring occasionally
for about 15 minutes. While our onions
cook, we’ll work on our broccoli. You’ll
need about 12 ounces or more of broccoli
florets. Cut the broccoli into bite-size
pieces. Add the broccoli to a large
mixing bowl and pour about 2 tablespoons
of oil over the top. I’m using avocado
oil here, but any oil will work just fine.
Mix with your hands to fully coat the
broccoli. Now we’ll season the broccoli
with some salt; ground black pepper;
garlic powder; and just a bit of cayenne
pepper. Mix with your hands, once again, to incorporate. Line a baking sheet with
aluminum foil. Pour the broccoli onto the
foil and spread as much as possible, so
as to not to overcrowd the vroccoli.
Place in the middle of a preheated
450°F oven for about 12 minutes, or
until the stems are fork tender. After
about 15 minutes of cooking your onions
should look similar to this. Add the
bacon we cooked earlier, and cook for
about 5 minutes more. Remove the broccoli
from the oven and place back into our
mixing bowl. Add the bacon jam to the
broccoli and give a stir to mix. Serve
hot and enjoy one of the best broccoli
dishes you’ll ever try! There you have it
