Welcome all! Papa G here. Today is Saucy
Sunday! It’s where we focus primarily on
low carbohydrate recipes for sauces, condiments,
and dressings. Most of the videos will be
short and to the point. Just something to
help add a little flavor to your low
carbohydrate diet. Let’s get started. For this
week’s episode we’ll be making a
homemade restaurant style salsa. This
fresh and simple recipe brings the
garden right to your table. It also adds
a great Southwest flair to your
otherwise ordinary breakfast.
I absolutely love this on my scrambled
eggs. Let me show you how to make it.
These are all the ingredients we’ll need
for this simple recipe. Use any type of
onion you like, but I recommend using
Roma tomatoes. their taste moisture
level are perfect for salsa. Now I’ll be
using a milder Serrano pepper for my
salsa, but feel free to substitute any
type of pepper you wish; just be sure to
remove the membrane and seeds. One of the
differences between salsa and picante
sauce is that salsa tends to be a little
less thick, and a bit less spicy. Give the
tomatoes a rough chop and do the same
with the onion. Add the tomatoes and
onion to a food processor, placing the
tomatoes on the bottom. Their moisture
level will help bring a smoother
blending. Add the cilantro; our Serrano
pepper, and four cloves of peeled garlic;
and we’ll finish with just a bit of salt.
Pulse and blend until the mixture gets a
liquidy, coarse texture.
Next, to a sauce pot on medium
high heat, add two tablespoons of the
oil of your choice. I’m using avocado oil
here, but any oil you have on hand will
work just fine. Let the oil get hot and
pour in our salsa. Reduce the heat to
medium and continue to cook for about
fifteen minutes. Cooking this like we’re
doing will help bring out the flavors of
the tomatoes and help to blend all the
flavors together. You may also notice as
well, it’s becoming a bit deeper red as
it cooks. Let cool and store in the
refrigerator. Serve it as a dip with your
vegetables or any low carbohydrate chip; or use
it as a condiment with your favorite
entree. There you have it folks!
