Ragi Cake Recipe – Eggless Ragi Mug Cake Recipe – Finger Millet Cake – Ragi Recipes

Hey Guys! I am Nisa Homey and welcome back
to my channel. Today, I am sharing a healthy
ragi mug cake recipe, which is eggless, gluten
free, dairy free, and vegan. This eggless
ragi cake is made without an oven or microwave
and can be made in just under 15 mins on the
stovetop. You can see how moist and soft this
ragi mug cake is, and no oven or microwave
is needed. Just a saucepan is required to
make this healthy ragi mug cake. So, if you
are living in PG hostel or is a bachelor living
alone and does not have oven or microwave
try this easy and healthy ragi mug cake. Mug
cakes are great when you have a sudden craving
for a cake. The best part is that you can
enjoy a mug cake all by yourself. Ragi or
finger millet is gluten free and is a highly
nutritious cereal and a must in your families
diet. This healthy ragi mug cake is a great
way to include ragi in your children’s diet.
So, lets get started with the recipe. I have
heated my small cast iron tawa and I am adding
in 3 tbsp of ragi flour and roasting it lightly
for about a minute or two. You can skip this
process if you are using roasted ragi flour.
Once roasted allow it to cool down and then
transfer it to a cup. The cup I am using is
200 ml. Into this add in 1 tsp arrow root
powder, arrow root powder is a healthy alternative
to corn flour. Add in 2 tbsp cacao powder,
1/8 tsp baking powder, 1/8 tsp baking soda,
1/8 tsp Pink Himalayan salt. I am using coconut
sugar for sweetness, however; you can use
palm sugar, jaggery powder, liquid jaggery,
or even maple syrup. Add 2 tbsp coconut sugar.
Now, with a fork mix all the dry ingredients.
Then, add in 2 tbsp virgin coconut oil, or
you can use wood pressed coconut oil. Virgin
coconut oil and wood pressed coconut oil has
a very neutral flavour. Add in 4 tbsp coffee
decoction or you can use any plant based milk
instead but coffee will help to bring out
the chocolate flavour. You can also use left
over black coffee. Add in a splash of vanilla
essence. Mix all this very well with the fork
until the batter is thick and creamy. Add
in juice of a lemon. I am adding in 1 tsp
lemon juice and mix everything really well.
Now, clean up the sides and then add in 1
tbsp chocolate chips in the middle and allow
it to sink down and sprinkle 1 tbsp chocolate
chips on top. I am using a sauce pan to bake
this cake and I have already added 1/2 cup
of water in the saucepan. Place two paper
napkins and then turn on the flame. Place
the mug in the sauce pan and allow the water
to come to a boil and once the water starts
to boil. Cover it with the lid and reduce
the flame to the lowest for exactly 15 mins.
Exactly 15 minutes later, open the lid and
turn off the flame. And remove the mug and
allow it to cool down. You can sprinkle more
chocolate chips or drizzle chocolate sauce
or some chopped cashew nuts like I have done.
