Quick Evening Meal For Two

Hi, I’m Phyllis southernfrugal.com. Tonight we’re going to fix some eggs and
this can really be a
Meal for the evening, or you could have it for breakfast, but it comes from a really old
Cookbook from New Orleans, and I’m not going to put the recipe down below this time because
It came in a cookbook, so I’m just going to demonstrate it. Alright
so what we need to you are about two tablespoons of butter and
In that we’re going to cook
This is about one third of a large
bell pepper, green bell pepper. I’m just going to put that in that butter, and that is about two tablespoons of butter, maybe a little more.
Also, this is about three green top
onions, that goes in (one escaped on the floor it will be smelling if I don’t find it)
so we’ve got these all about a high medium now I did cut the little bell peppers
really small with my Vidalia onion chopper. With that little smallest grate that goes in there.
So we’re just going to let these cook down and
Really get done. I don’t want a brown on those so this will take I don’t know maybe ten minutes and we’ll be back
Alright our onions and bell peppers
Are not really completely done but they’re done enough. So what we’re going to do
Now is I have cut up a tomato, and this is a vine ripened tomato
Deseeded it
Take that off so that it doesn’t start browning too much
And you can use some paper towels to kind of dab off some of the water
And so what we’re going to do is go ahead and dump this tomatoes right in with the peppers
We want to get all that moisture or as much as we can out of them. So we’re just going to mix that up
Now we’re going to dump that into a little, this is kind of a small little casserole
-pyrex casserole. Now we’ve got our oven preheated to
350 degrees. So we’re just going to spread that out in the bottom, like that
I’m going to crack four (4) eggs
Right in this little dish this would be a great meal and is going to be a great meal for just two people
All right, so we crack my eggs
I’m doing it here so I don’t have to move the camera
Just carefully put them there
And these are extra large eggs
Wash my hands I’ll be right back (I can’t even cut my camera off, hold on)
Alright the next thing we’re going to do is put some hot sauce on the yolk of the egg
Now you can use Louisiana hot Sauce Texas hot sauce
Texas Pete, whatever
Just shake that up a little bit
just put put a couple of drops on the yolk of the egg
and then the next thing we want to do is cover this with the mixture of
breadcrumbs; now these are not hard
They’re soft breadcrumbs
And this is about, that’s probably a little more than 1/2 a cup of shredded sharp cheddar cheese
I’m just going to mix an
equal amount of
the bread and the cheese and
Again you want to preset your oven at 350 degrees
This is really easy to make very easy
Mix that up really good
Like that, alright. Now we are going to right over the top
of those eggs
and again this would work for
certainly for two people and
if you wanted to make it bigger you to just double the recipe and it could be an evening meal
Which is exactly what it’s going to be for us.
We don’t usually eat a meal this big this time of night, but
We needed something so. Alright so now we’re going to sprinkle it with a little
Paprika right on top
And now the next thing we’re going to do is actually
drizzle some beer over that. Now I get the
coors light to make
beer bread and
So that’s probably what I’m going to make tomorrow because I’m going to use a little bit of this. I get
Maybe a 6-pack of this a year, and I use it mainly to make a beer bread.
Alright, so we’ll hold my finger over it and just drizzle it over
everything
So that’s maybe
Probably not even a fourth of a cup
Just wetting those of dry breadcrumbs. Now they’re they’re soft bread Crumbs on there. This is not
This is not like the panko
Breadcrumbs, this is actually I used a french bread and ground it up in the food processor.
You need to soft bread. Alright
It’s going to go in the oven 350 degrees until the eggs are done and these are extra large eggs
So I’m go say 12-15 minutes. Maybe a little more. Anyway when it gets done, we’ll be back
Alright, just took this out of the oven and I did have extra-large eggs
So this actually cooked about 20 minutes, so I’m going to get this on the plates now and just let it cool
Just a minute or two in the pan and put it on the plates and show you what it looks like. We’ll be back
Alright, here’s what it looks like on the plate now. This is our little meal at night. So we’re only having one of these
There’s mine, and there’s two left over which will probably have tomorrow night
Alright, y’all we will see y’all next time this does have the effect of
Sort of like a poached egg
Anyway, I hope y’all will try this. It makes a great meal for two people and if you wanted to
Make the meal for a lot more people you could just double or triple the recipe
Now I did cook mine for 20 minutes in the oven because these were extra-large eggs
But depending on whether you want it runny
Or you know the yolk runny or not you could sort of judge the time that way and there’s Mr. Bucky’s. Alright
