Nut and Seed Bread & Crackers | Vegan, Paleo, Keto

hi everyone welcome back to my channel
in today’s video I’m gonna show you how
to make a loaf of bread and crackers
that are not only vegan but also paleo
and keto friendly the recipe is inspired
by Sarah Britain’s a life-changing loaf
of bread which you might be familiar
with alright so the base of this bread
and crackers is made from nuts and seeds
here I’m using a blend of almonds
pumpkin seeds and hazelnuts which I’m
gonna process into coarse flour if you
are allergic to nuts feel free to use
just pumpkin seeds if you aren’t fan of
hazelnuts use pecans instead what I’m
trying to say is that you can use a
blunt of any nuts and or seeds
except for binding seeds which I’m going
to talk about later
once your nuts and seeds are coarsely
ground add some sunflower seeds flax
seeds and chia seeds flax seeds and chia
seeds are gonna help hold the bread
together
you absolutely need those another
binding ingredient is Sicilian I use
psyllium a lot in my recipes because it
has so many health benefits here I’m
using whole psyllium husk you can also
find powdered psyllium which has the
same binding properties as whole
psyllium it’s just much more
concentrated one last binding ingredient
I’m gonna use is golden flaxseed meal
the last little ingredients are salt and
a sweetener you can use any sweetener
you like powdered a liquid or you can
completely leave it out mix all the
ingredients together until well combined
add some warm water a little bit of
coconut oil and mix all the ingredients
together you should end up with a very
thick batter dough that doesn’t really
look like it’s going to hold together
but it will if you find that it’s really
dry just add two tablespoons of warm
water at a time until the dough sticks
together when you press it between your
fingers
now in this video I’m gonna show you how
to make both nut and seed bread and nut
and seed crackers to make the bread
transfer the dough into a parchment
paper line to loaf pan and smooth out
the top to make the crackers roll out
the dough in between two pieces of
parchment paper into a sin sheet you can
either make three really thin sheets of
crackers or two thicker ones
if you get any holes as you’re rolling
the dough out it’s not a big deal just
grab a little bit of the dough from the
edges and patch it slide the parchment
paper with the dough onto a baking sheet
and score the dough with a tip of a
knife you can go with rectangles
triangles use cookie cutters it doesn’t
matter
bake both the bread and the crackers at
350 degrees Fahrenheit until cold and
brown admittedly the baking instructions
are a little more complicated than this
but I will have all the details on my

box below the video and that’s it one

we go through a lot of bread and
crackers in our house and most of the
time it’s tena eating it and most of the
time it’s white bread and white crackers
and when I make my nut and seed bread or
not and seed crackers channa is usually
just like no thanks I’ve got my own but
this morning I told him that we’re gonna
do a thesis for it so he had to give it
a try
and I think that your reaction was
pretty good mm-hmm I think it was too I
think that the crackers are delicious
they’ve got a very buttery flavor yeah
that was your first reaction that
there’s butter in there mm-hmm it tastes
like dairy butter or a combination
between like mmm 85% dairy butter with a
little bit of peanut butter in there it
was the best way that I would describe
the flavor I think that the texture is
really fun there’s a lot going on
because you have sesame seeds no sesame
seeds no sesame seeds no these are flax
seeds the little ones that you see these
are golden flax seeds oh okay I’m
tasting sesame seeds but there’s a lot
to taste in terms of seeds in here but
the sunflower seeds are the largest so
they’re the most noticeable most
important thing we need to remember from
this is they are buttery these crackers
are just delicious and butter the bread
isn’t like I probably wouldn’t use it
for a sandwich because it lends way too
much flavor to a sandwich like maybe if
you did like spreads or something on it
like you could do jam or hummus or
something like that on it but something
more assertive yes it would need to be
have to overpower the flavor of the
bread because the bread itself is just
it’s good to eat by itself honestly if
you had Petra had mentioned if you had
dried fruit and you put it in the bread
that’d be cool yeah or different herbs
and spices hmm so it’s almost like a
side dish on its own
that’s how I would describe it it’s very
it’s heavy but it’s got a very cooling
flavor on the palate and like the
crackers it it tastes like there’s
there’s something oily or buttery in
there that’s coming through but it’s
very it’s it’s colder than the crackers
it feels like very the oil is bringing
in there must be coconut oil on that yes
it’s a coconut oil it has that cooling
effect that’s how it is right you can
all taste the coconut oil but it has the
cooler yes yes that’s what I would say
with the bread all right so I hope you
