I have an easy chicken recipe for dinner with
few ingredients.
It is a delicious and healthy chicken with
artichoke recipe.
I think it’s the best baked chicken with
artichoke and i am going to use marinated
artichokes but you can use just regular non
marinated if you want because i do that sometimes
too and it tastes just as good.

I have been making this super easy and fast
recipe for so many years and i just adapt
it based on what i have in the refrigerator.
Sometimes i use a different type of cheese,
or frozen artichokes instead of the marinated
ones in the jar.
You can add whatever types of seasoning you
want to this, but the way i am sharing today
i just one of my favorites.
I will also be showing you the quick side
salad I put together to serve with this meal.
It ended up being a really filling and well
rounded healthy meal.

I made this recipe with 3 chicken breasts,
and it took around 45 minutes from start to
finish.
Ok, let’s get right into what you will need
to make this marinated artichoke chicken recipe.
The ingredients you will need are:
3-4 Chicken Breasts
1 can or jar of artichoke hearts.
You can get the marinated ones or the plain
1/2 Cup plain Greek yogurt
3 Tbs parmesan cheese
1 Tbs capers
1 Tbs minced garlic
That is it!
I love simple and easy recipes with few ingredients
like this one.
1. first you will want to Pre heat the oven
to 425F.

Spray a baking dish with baking spray and
place the chicken in the dish

Combine the rest of the ingredients and pour
onto the chicken
3.
Bake for 30-35 minutes
While this was baking I threw together a healthy
side salad.
I had some spinach, added some cucumbers,
grape tomatoes, mushrooms, and hard boiled
eggs in there and then topped with salt and
pepper.
I used some yogurt dressing which is light
and only 35 calories per serving.
Next I plated the chicken breasts and the
greek yogurt turned into a very flavorful
sauce, so i made sure to use a big spoon to
scoop some of that on top.
And then here is the final product.
