Low Carb Eggs Benedict – Savory Hollandaise Sauce – Keto

Welcome all! Papa G here. Today I
present a delicious start to a wonderful
day. Low carbohydrate eggs Benedict
with my savory hollandaise sauce. Let’s get started…
We’ll work on the hollandaise
sauce first by separating four egg yolks.
To the yolks, we’ll add some lemon juice
and a couple of drops of EZ Sweetz or
the sweetener of your choosing; roughly
two teaspoons of a sugar substitute. This
won’t sweeten our sauce as much as it
will reduce the tartness, while keeping
that classic lemon flavor. Mix well until
combined and thickened. In a small pot,
bring about an inch of water up to an
almost boil then turn the temperature
down to a simmer. This is the key to
making this sauce – not using too hot of a
temperature. We don’t want to cook the
eggs. Place the bowl on the pod ensuring
the bottom of the bowl does not touch
the water. We’ll bring the egg mixture up
in temperature and then add our melted
butter a little at a time at first; then
add the rest, continuing to whisk as it
warms. Once our sauce thickens a bit,
we’ll add our spices. some salt; cayenne
pepper; and some dried dill. Mix
thoroughly and continue to whisk until
it thickens; about three to seven minutes.
Now that our sauce is thickened, we’ll
begin to cook our eggs. You know I like
shortcuts and poaching eggs is no
exception. Some people like rice cookers;
I like my egg cooker. Shut it. Set it. Forget it. Perfect eggs every time. While
eggs pouch, will move on to our
Canadian bacon. Sear both sides on
medium-high heat until they just begin
to brown. Our eggs are finished and we’ll
remove them from the cooker and begin to
assemble our dish.
To replace a high carbohydrate English muffin,
we’ll use half of one of my low carbohydrate
buns. I’ll leave a link in the
description below for the recipe.
Toast the bun until golden and butter
generously. Place a slice of Canadian
bacon on the bun and top with some
baby spinach and avocado slices. These
will add great texture as well as
something very important on a low carbohydrate
diet… electrolytes. Primarily potassium
and magnesium. Two minerals needed on a
low carbohydrate diet to help balance
the diet. Now place our poached egg on
top and drizzle on our hollandaise sauce.
Now we’re ready to eat. Look how
perfectly creamy and delicious! There you have it folks. Low carbohydrate eggs Benedict
