Low Carb Coconut Peanut Butter Fudge – Keto Fudge
Welcome all! Papa G here. Today I present
low carbohydrate coconut peanut butter fudge,
This is a very easy recipe to make and
has less than 3/4 of a carbohydrates per serving.
It makes a great low carbohydrate snack anytime
you want just a little something to keep
you going. Let me show you how to make it.
You want to be sure to use unsweetened
coconut for this recipe. Also, you want to
use a peanut butter that has as few
ingredients as possible with no added
sugar. We’ll make our own maple syrup for
our recipe by combining a quarter cup of
tapioca syrup and a teaspoon of real
maple extract. Mix and set aside. Add 2
cups of unsweetened coconut flakes to a
food processor. Blend for about 4 to 5
minutes – in 30 second intervals, scraping
down the sides with a spatula as needed.
After a few minutes you should have
something that has the consistency of
cold butter. Add one cup of creamy
natural peanut butter and a half a cup
of melted coconut oil. Blend to combine.
Now add our homemade maple syrup;
a liquid sugar substitute equal to three
tablespoons of regular sugar; a little
salt; and some vanilla extract. Blend once
more to combine. Line an 8×8 by pan with
parchment paper and pour the mixture in
the center. Use a spatula to spread as
evenly as possible. Now give it a jiggle
to help even it out. Place uncovered in
the freezer for 20 minutes to set.
After 20 minutes, remove from the pan.
Mark the cutting lines by scoring with a
sharp knife. Now go back over the lines
and gently cut. You should get about 32
pieces. This fudge is not too sweet and has a
great texture and taste. Eat it right
away or store in the refrigerator for up
to 10 days. There you have it folks! My
