Lemon Lime Fat Bombs – Low Carb Keto Cheesecake Dessert

Welcome all! Papa G here. Today I present
another low carbohydrate treat. My sweet and
creamy low carbohydrate lemon-lime bites. With
only 1.07g net carbs per serving,
it’s a zesty treat that’s small in size,
but big on flavor. Let’s get started.
To a medium mixing bowl, add a half a cup
of almond flour; 1 cup of ground pecans; a
little ground nutmeg; and a bit of salt.
Give that a mix to combine. Now add a
quarter cup of melted coconut oil and a
liquid sugar substitute equal to two
tablespoons of regular sugar. With your
hands, combine and mix together to a mini
muffin tin, line with small paper muffin
cups. Add the crust mixture to each cup. I
find using a small measuring spoon
helpful. You don’t want to add too much
in each – just enough to cover the bottoms
to about an eighth of an inch. After
filling each cup, with your fingers,
gently press the crust down to compact.
Now place in the middle of a preheated
350°F oven for 10 minutes. For our
filling, we need the zest and juice from
one lemon and one lime. Zest each, being
sure to only get the top layer.
After zesting, extract the juice from each and
set aside. To a large mixing bowl, add 16
ounces of softened cream cheese; two
lightly beaten eggs; a granulated sugar
substitute equal to 2/3 cups of regular
sugar; 1/4 cup of sour cream; and our
lemon and lime juice.
With an electric mixer, beat until all
the ingredients are combined.
Now add some vanilla extract and the
zests of our lemon and lime. Mix again to
incorporate. Be sure to scrape down the
sides during mixing. We want all of the
zest we can into the mix. To our cool
crusts, add about a tablespoon or so of
the filling into each cup. When filled,
place in the middle of a preheated 350°F
oven for about 17 minutes, or
until the tops are slightly cracked, but
not brown. When done, remove and place on
a cooling rack to cool. When they’ve
reached room temperature, place in the
refrigerator for at least three hours.
After they’ve completely chilled, you’ll
be rewarded with a delicious, zesty
bite-size little treat that has just a
bit over one net carb. If you’re serving
these for a party, dress them up a bit by
garnishing with a bit of lemon and lime
zest before serving. There you have it
folks! My sweet and creamy low carbohydrate
