Lauki Kofta Curry Recipe – Indian Vegetarian Recipe in Hindi – Lata’s Kitchen

We can make many dishes with bottle gourd like
lauki sabzi, lauki kheer, lauki raita etc
Today I’m going to make Lauki Kofta Curry
These are very tasty and quick to make, lets
see the ingredients required for making it
For this we’ll need
Bottle Gourd (Lauki / Dudhi) – 1 1/2 cup, grated
Tomatoes – 4, medium sized, shopped
Gram Flour – 3/4 cup
Cumin Seeds – 1 tsp
Carom Seeds – 1/2 tsp
Oil – 2 tbsp
Garam Masala Powder – 3/4 tsp
Green Chillies – 3, finely chopped
Whole coriander seeds – 1 tsp
Red Chilly Powder – 1/2 tsp
Mint leaves – 8 to 10, chopped
Asafoetida – 1/8 tsp
Ginger – 1/2 inch piece
Baking Soda – 1 pinch
Salt – 2 tsp
Cashew nuts – 15, soaked in water for 2 hours
Turmeric Powder – 3/4 tsp
Oil for frying
Lets start making kofta curry
Add little more than 1/2 tsp of
salt to the grated bottle gourd
You can adjust salt to taste
Add gram flour
1/4 tsp garam masala
1/4 tsp red chilly powder
Mint leaves, some green chillies, baking soda,
coriander seeds and a little amount of turmeric powder
Carom Seeds
Mix all the ingredients well
Paste for koftas is ready
Oil is heated, turn gas to medium
Take some paste, make a ball out
of it and put it in the oil
similarly make all the balls
Keep the gas on medium
Flip the koftas often and fry
them until golden n brown
Koftas are done, take them out into a plate
Kofta balls are ready
I have used fresh mint leaves,
you can use dry mint leaves also
Now lets make gravy for our koftas
Blend tomatoes, ginger, green chillies
and cashew nuts into a fine paste
Paste for the gravy is ready
Heat oil in a pan
Check if the oil is heated
by adding few cumin seeds
Oil is heated, now add cumin seeds
Add asafoetida, red chilly
powder and gravy paste
Keep stirring it and keep the gas on medium
Add turmeric powder and salt
Cook it until oil starts to separate
Oil has started to separate
Now add garam masala powder
Add 2 cups of water
Boil it
It is looking very nice in colour
It has started to boil, now lower
the gas and add koftas to the gravy
You can adjust the thickness of
gravy according to your choice
Let it cook for 5 minutes
Its been 5 minutes, turn the gas off
Cover and let it rest for 10 minutes
Its been 10 minutes, our kofta curry is
ready, now take it out into a serving bowl
Lauki Kofta Curry is ready
It can be served with roti, naan, paratha, puri or rice
You can prepare it for guests
or any special occasions
