episode of Ketovangelist not episode
session of ketovangelist kitchen I’m
Brian and she is Carrie Brown so what’s
going on okay how are you today I’m
awesome because I’m going on a road trip
tomorrow
Oh like I’m going to I’m going to leave
the the fall that has descended on
Seattle and I’m gonna head south to the
California sunshine oh so this is a good
thing then right it’s not like oh it’s
awesome thing okay good oh how many days
how many days you’re gonna be going ten
I’m gonna swung around Yosemite and the
Sierra Nevada mountains or shoot stuff
what I believe what Carrie Brown means
is she’s going to take photographs of
things yes prefer preferably things that
don’t breathe and aren’t alive that does
not mean that Carrie Brown is going to
make sure that they are no longer alive
before she photographs them that means
she’s going to be taking landscape
photos and flora photos and not fauna
stuff right I just feel like I need to
make sure the audience understands what
you’re what you’re saying that’s all and
feet I like to photograph your feet I
don’t a road trip this now it’s getting
weird now it’s just getting a little too
weird so why I had a pedicure this
morning pre-trip pedicure it’s a must
oh alright that’s that’s that’s good
planning that’s what that is is good
playing okay right please
alright so we’re doing a cute Evangelos
kitchen episode right so what are we
talking about today we’re talking about
keeping it simple and getting started
because like everything on earth we
humans just seem to have a a passion for
and are very good at making the simplest
things complicated way more complicated
than they need to be and for someone who
is new to quito they could be going on
the internet and type in quito and just
being getting the kind of the firehose
like being bombarded by a million
different bits of information not all of
which will say the same thing i yeah for
sure and that’s it’s a common refrain
from new folks is that they’re so
confused or so confused so confused and
while it’s easy for someone who’s been
in this life for for a long time to
scoff at that you know it’s important to
keep in mind we’re talking about a
complete and total paradigm shift right
we’re not talking about just trying to
figure out how to make a new kind of you
know jelly that doesn’t involve sugar
that we’re talking about like changing
everything that you’ve heard about
nutrition for your entire life so so it
can be daunting right because you’re
gonna be you’re gonna be involving
yourself in some stuff that you know
before you would have never dealt with
the high fat food what that’s dangerous
turns out now not so much right so what
is the advice that we’re giving to folks
when just starting out what is what is
the best advice that we can give to new
folks well I think for me one is just
get started I think it would be very
easy to be completely Dell used with
information and become so overwhelmed
that you procrastinate like you don’t
start because you don’t know where and
you don’t know what it you don’t know
you want to do it right but you don’t
know what right is because there’s all
these different voices screaming at you
and so that can paralyze you into doing
nothing right there there are some very
easy albeit they might not be the most
interesting but there are some very easy
ways to just get started while you
figure out how to do it you don’t have
to have it all down before you get
started you can just start making some
simple switches immediately while you
kind of control the fire hose of
information that’s coming at you and and
you know and then over time you’ll learn
and get better at you know what what’s
the truth and what isn’t and what works
for you and what doesn’t right I mean so
essentially the advice that I always
give to people know just starting is
simplify right right don’t exactly right
stop trying to make things way more
complicated than they need to be
simplify but even then that’s kind of
hard for people to figure out well so
how do I simplify what does that even
mean so what’s the advice that we give
them for
that well and I think another point is
when for people who come to this and
realize that they’re going to have to
cook and that’s something they’ve never
done before that can make it even more
like scary and oh my god and you know
make them procrastinate so there’s
there’s some very simple things we can
do to get them in the kitchen
without having to be a you know a cordon
bleu chef and and that and again get
them going without them feeling like
they have to understand the entire thing
before they can do anything right so
again it this is not about perfection
right this is about making incremental
changes in your life to take control of
your health you’ve got to think long
game long term right you’re not right
this isn’t like one of my frustrations
with and I’ve written about this but one
of my frustrations with celebrities when
they advocate a particular way of eating
the celebrity is doing it for a short
term because they’re trying to get a
film role or they’re trying to do this
that or the other but the problem is
when they do that everyone thinks that
keto is temporary and it’s not it is a
lifestyle it is a lifelong thing so you
have to keep that in mind when you’re
starting this is not about getting
everything right up front you can slowly
work yourself off of the bad food and
slowly work yourself onto the back onto
the good food if you need to so don’t
think that you’re doing it wrong to do
that right I think one of the one of the
common cries though is when they’re
right at the star they’re like okay I
know I can’t eat any of that then what
do I eat and you know to then be having
to search the internet for keto recipes
and having to figure out all these new
techniques and and all just stuff now
yes you can get to that if that’s your
thing and you want to make the keto
versions of regular foods great but to
get started you can get keto like
immediately and that this might sound
kind of really basic and dumb but when I
and and I’m I’m a chef but when I went
keto when I went to keto for my brain
because I had
to disorder so I went Quito for my brain
and when I did there I just simply
started cooking sauteing fatty meat and
then sauteing non starchy virgin coconut
oil or avocado oil or butter simple
right so simple and and you know I was
in ketosis like the next day I mean it
was immediate and I didn’t have to and I
knew that I was most of the way there
without understanding anything about it
I was already most of the way there just
pan frying pork chops fatty pork chops
or pan frying lamb and I’m finding some
non starchy veggies some green veggies
and either having a salad or sauteing
some you know rice cauliflower and some
leeks or you know some other green
vegetables and that was it and that’s
what I did for like the first month
while I was then absorbing all the
information about you know all the
different nuances that’s what I did and
and so it was incredibly easy it took me
literally five to ten minutes a day to
cook dinner there was no special
ingredients there was no special
equipment no special techniques knows it
was easy I came home I slung a chop in
the pan I chopped up some non starchy
veggies threw them in another pan five
minutes later dinner right and so I was
already there right so I was I was I was
flying the plane as I was building it
and and that’s my point is it is don’t
don’t wait until the planes built before
you start to fly it you can you can do
it
it may not be for people who love food
and who are you know who love cooking
that might get boring after a while to
just have you know your pan fried fatty
meat and and a you know on a shovel full
of vegetables or salad then you can
start branching out but don’t wait to
get started just keep it simple right
and so my personal
example of how I started it you know is
I basically did it’s very something very
similar I’d grab some ground beef shaped
him into into hamburger patties cooked
them up put something on them that was
keto friendly it could be guacamole
could be you know even avocado slices
cheese or I would make a cream sauce and
pour it over or cheese sauce whatever
poured over it and that was that right
so I mean it’s it does not when you
start to cook things using real
ingredients you start to realize how
easy cooking can actually be it’s not
that hard it’s not that complicated all
right and also you realize how easy it
is to make something that tastes good
for you right part of the problem with
low-fat fare is you have to add a lot of
stuff to it because the fats where the
flavor is
for the most part right so when you’ve
got a high fat meal chances are it’s
going to taste pretty good it’s gonna
those flavors are going to come out
right so and he even simpler is Costco
for example certainly in the u.s. there
gara Costco get their Kirkland turkey
burgers and their Kirkland salmon
burgers if you look on the ingredients
there’s nothing in them right
except turkey and salmon and a few herbs
they are fantastic I think the the
salmon burger is some crazy thing like
30 grams or the turkey burgers are like
30 grams of protein in in one burger
right and then you know add some salad
with a big dollop inge of healthy fat
Pawnee in a dressing or you know pan fry
yourself some non starchy veggies in
butter or coconut oil and you’re done
and that’s super easy and of course
that’s also a very cheap way to do it so
you don’t have to like figure out how to
do this thing or or stock the fridge
with all this weird stuff or you don’t
have to do any of that to get go you
don’t have to do any of that ever right
but a lot of people would get bored with
doing what I’m such
as you know an everyday thing but at
least you can get started and know
you’re on the right track right there
and then you can branch out and then you
can start learning the nuances and then
you can start getting creative in the
kitchen but to get going if you just eat
eggs fatty meat and some leafy greens
and add some fat some healthy fat so
ever part of oil coconut oil
you’re good stop there right and that’s
and that right there that’ll last year
right um I think I think the most I
think every successful keto person that
I’ve talked to who’s been keto for you
know a long time and they they cannot
ever see themselves eating another way
and this is their lifestyle now every
one of them has said has done exactly
what you just described they made a
decision and they kept it simple in the
beginning and they can add to it as they
get more comfortable with it right
because it’s already a big enough change
you don’t have to you don’t have to over
complicate this so right when you are
making that change and this goes for
people who have been keto for a while
but they’re starting to feel that way
too
there’s nothing wrong with simplifying
down a little bit right and you know
kind of take getting back to your roots
as it were right you know and there’s no
you know I sometimes get there from from
reading other food blogs like I kind of
get this sense that particularly for
women there’s this kind of this they
feel this duty to come home and do this
gourmet meal and it’s like you seriously
can have a fantastically awesome keto
dinner in five minutes a night I’m not I
do it every night so I know that it’s
perfectly possible it’s an it real
delicious food you don’t have to come
home if you’re not using you know packet
convenience food or you know microwave
dinners it’s actually easier and a lot
quicker for me to do a keto meal with my
fatty lamb chop and my my sautéed leeks
than it is for me to sling some
convenience food in the oven or the
microwave right I think we
if there’s a lot of women who kind of
feel like they’ve somehow failed if they
don’t spend an hour in the kitchen you
totally don’t have to do that yeah I
would not qualify myself in that camp
not just because I’m not a woman but
also I if I can get in and out of the
kitchen you know cook a meal that I can
eat in five minutes I’m all over that
you know I’m good with that
I think he’s part of the marketing
though of the the food companies that
make all this convenience who they want
us to eat it right because they want us
to buy it so the message over time has
become if you don’t buy this convenience
food you are going to have to spend an
hour in the kitchen to get something
good and that’s just not true at all
so I think we need to kind of D
sensitize ourselves to the reality the
awesome food can be made in five minutes
and it’s actually faster than whatever
comes in a box right and keep in mind
also you’re probably going to eat less
of the food that you make because if
you’re kedo your your appetites gonna
drop dramatically if you’re eating
something that you slap into a microwave
it chances are it’s you’re gonna be
hungry again in about 15-20 minutes so
you know you may end up having to make
yourself food anyway because you only
got so many microwave deep meals and
your fridge the fastest way in my
experience the fastest way to get into
ketosis get over the keto flu and and
you know get on the right track with
almost like zero knowledge you could
just listen to this podcast and nothing
else and be Kito adapted in you know
next to no time fatty meat eggs non
starchy vegetable butter avocado coconut
oil as a dressing or to cook your food
that’s it go to start there I would like
to take a moment now to advocate for
eggs again
they are probably the most keto food of
everything yes they are they are almost
the perfect example of high fat moderate
protein zero carb food
and they’re just there not only that but
you can attest to this on account of you
are a chef although I don’t pronounce it
cordon bleu so because you’re an icon of
that I don’t know if I I don’t know if
I’m qualified to talk about food if I
can’t pronounce that anyway so eggs are
versatile right they’re super super
versatile and when you’re just starting
out finding different ways to get eggs
in your food is is really quick and easy
way to add a little bit of pop to your
food right right and you know there if
you if you’re looking for a luncheon you
going okay well that’s all my dinners
solved without me having to search the
internet every night for something to
make or a rescuer and you don’t have to
do any of that because you’ve got your
your fatty meat and your pan of edges
right you know lunch is easy either make
across this quiche with eggs and
whatever you know bacon cottage cheese
vegetables you like in it bake it in the
oven there are some recipes on my blog I
cut it up take you for lunch delicious
or even if you can’t even if that’s too
much of a start to overwhelming hard
boiled eggs oh yeah perfect snacks
perfect snack cardboards take four
hard-boiled eggs for lunch and a pile of
spinach kale you know some interesting
green leafy things done doesn’t need to
be complicated and eggs are just the
perfect thing and you don’t have to
count macros for eggs or you just eat
them you don’t there’s just nothing you
have to do around the whole counting
macros ah no no just the eggs right
that’ll take that’ll solve it for you
all right and then if you’re if you’re
if you’re doing the intermittent fasting
if you’re doing two meals a day which
yeah I find it actually hard to eat
three meals a day now because I’m fat
adapted and so I’ll I’ll have lunch at I
don’t know 12 and then I’ll have dinner
and then I won’t eat again until twelve
the next day and it’s and you’re tested
this is because you don’t get hungry
anymore when you’re keto adapted and so
that might sound weird to new people but
you seriously
you lose your appetite so you only have
to solve for two meals and I’ve just
solved them for you right and in let’s I
want to make sure everyone understands
it’s okay if you don’t have an appetite
that’s not a bad thing right so people
freak out like I’m not hungry that’s a
good thing that means your body doesn’t
need food right now so just don’t eat
because the clock says you should if
you’re not hungry don’t eat and and be
okay with that
yes exactly okay so any other parting
shots or final thoughts on starting off
keeping it simple you know best ideas
for that stop reading stuff on the
internet
apart from Brian’s blow my blog I did
not pay her to say that yes you want to

she’s Carrie knows about a thing or two
about food so you should check out her
stuff if you haven’t already so and I
say that not just your you will the
chances that new people will get
completely confused and discouraged and
overwhelmed and just run away and not do
anything is really high if you’re
starting to read too many oh yeah
different stuff so I just keep it simple
I’ve sold lunch and dinner for you until
you you know got used to it and and then
just keep the inflow of information to a
minimum right get on Brian’s
Facebook page fabulously decent kind
people on there not a lot of the
Facebook groups are like filled with
people who are just like right now and I
and it kind of gets a bit scary but but
Brian’s group is not like that go there
read Brian’s blog read mine listen to
our podcasts and keep it simple keep it
simple and once you your body starts
understanding how it feels to be key to
adapted and you’re starting to see the
results and you’re starting to be
comfortable with the fact that it really
isn’t weird then you can start to you
know consider other things maybe look
cooking something a bit more complicated
or you know an how do you do that and
stay keto and all that kind of stuff but
don’t you don’t have to start there and
that is going to be the subject of many
many future section sections of this
particular segment Kari and I are gonna
be talking quite a bit about how to do
some of those things moving forward so
there’s time basically keep it simple at
first don’t worry we’ll take care of all
the advanced stuff that you want to do
we keep it simple get used to it
adjust then we can worry about all the
other stuff all right yes then I guess I
go alright I got if that’s all you got
then that’s all we need Missy that’s the
truth of it you laying down the
knowledge er whatever yeah I don’t know
