Ketogenic Cinnamon Graham Bars
>>I’m going to demonstrate our Cinnamon Graham
Bar, which is a perfect no bake on-the-go
Since it’s made with cocoa butter, it doesn’t
melt at room temperature, which makes it perfect
for school lunches or for picnics.
For the Cinnamon Graham Keto Bar, we need
cocoa butter, which is solid at room temperature,
graham cracker, almond flour, pecans,
and creamy peanut butter.
Begin by making a bar by weighing
the cocoa butter on a gram scale.
The rest of the ingredients have
already been weighed ahead of time.
After weighing it, melt the cocoa butter so
it will be easily mixed with the other ingredients.
Add in the almond flour and stir
with a spatula to form a paste.
Add in the peanut butter, chopped pecans and
chopped graham crackers.
The pecans and graham crackers can either
be coarsely chopped with a knife or more finely
ground in a small food processor.
To sweeten the mixture, add in liquid stevia,
cinnamon and DaVinci gourmet sugar-free chocolate
syrup, then mix well.
Scoop the mixture onto a baking sheet lined
with parchment paper.
Using your fingers or a spatula, press down
to shape the mixture into a square or a rectangular.
If you find that the mixture is sticking to
your fingers or the spatula, you may use cold
water so that it will not stick.
Place in the refrigerator for about
20 minutes to allow the bar to solidify.
It is now ready to serve, or it can be stored
in the refrigerator or freezer for future use.
>>This recipe can be modified
in a variety of ways.
Different nuts can replace the pecans, variety of
cereals or pretzels can replace the graham crackers.
Also, you can use different flavors of sugar-
free syrups to create your child’s favorite
