Hi guys, it’s the Keto King here, aka the
banting boss. Today we making a keto mug cake (cinnamon mug cake.) So let’s get right to it The ingredients you are gonna need are some cream cheese; coconut flour; whole milk; xylitol; stevia; olive oil; baking powder cinnamon powder and an egg; and then the mug and the
ramekins for your cooking; Right, let’s get started guys starting off with 1 tablespoon of olive
oil Next up, add 2 tablespoons of whole milk into the cup where you have put the olive oil Next, crack your egg into the cup Next we have to do somethin special with the cream cheese. Take the cream cheese, put it into one of the ramekins . I recommend softening it up Put 1 tablespoon of cream cheese into the ramekin, pop it into the microwave and once it comes out I do it for me fifteen to twenty
seconds it looks a nice creamy texture like that when you’ve got that soft
creamy texture pop-in in the mug as well. This just makes it a lot easier to
mix in with the other ingredients Give it a good mix and then add a 1/4 teaspoon of baking powder Then grab your cinnamon and add 1 teaspoon
to your mug Then we are gonna grab the coocnut flour and be adding 3 tablespoons of coconut flour right next comes the sweeteners. We have stevia and we have xylitol (this is a low sugar mug cake) Now I’ve done this recipe with only stevia
and for me I don’t quite like the taste so what I found is putting half stevia
and have xylitol is the perfect combination So for quantities, I put in 1
tablespoon of stevia and 1 tablespoon of xylitol As you will see, the stevia is a nice fine powder, simply add it in, it mixes perfectly. The xylitol is the same. It’s a granular somewhat powdery texture. Add it in, it makes it taste fantastic Give it a good stir again Make sure the ingredients are nicely incorporated and blended together. And this is what your mug cake should look like. It is somewhat runny And even if there are a few blobs of cream cheese in there, it is no hassle. Next I put in about 2 tablespoons of cream cheese in another ramekin. Now this is for the icing on the cake Put the two tablespoons in the ramekin and put it in the microwave to get it nice and soft. Then I add 1/2 a tablespoon of xylitol Now guys, this is up to you depending on how sweet you
like it. For me I don’t have that much of a sweet tooth so 1/2 tablespoon is
perfect. Just adjust accordingly Mix in the xylitol until you get
a nice creamy texture; it’s a really nice, creamy icing like texture. Put that aside and
we’ll put that on the mug cake once we’ve microwaved it. Take your mixture and we are gonna go pop it in the microwave. Now
two minutes usually does the trick but obviously this will vary according to my
microwave strength and the different sizes of the mug used. These 2 minutes are a perfect opportunity to clean up everything give the counter a wipe and get everything ready to
enjoy our delicious mug cake The mug cake is out of the microwave, turn it upside-down, give it a tap and it usually comes out. I like to turn it other way round so you have a nice flat surface to put the icing on Grab your icing and xylitol mixture and spread that all over the top And this is an optional step, you can put some cinnamon on top (it is a cinnamon mug cake after all) . I think it gives it a nice flavour and aesthetic appeal too. And finally, what we need to do, is have a taste test Thanks for watching guys.
