Keto Mexican Chocolate Cupcakes | Keto Desserts Recipe

Ingredients
2 Cups almond flour
1 cup granulated erythritol
1 cup coconut or almond milk
2 eggs
1/2 cup melted butter
unsweetened or sugar-free chocolate chips
1/4 tsp cayenne
1/2 cup cocoa powder
1 tsp cinnamon
1 tsp baking powder
1 tsp vanilla extract
Sift all dry ingredients together (except erythritol)
blend together eggs, vanilla, coconut/almond milk and erythritol
Slowly pour in butter making sure not to cook the eggs
Add dry mixture in 1/3 increments and keep beating
Stir in chocolate chips
Line a muffin tin with cupcake liners
Bake at 350F (180C) for 20-30 minutes – test with a toothpick which should come out clean when done
