Keto Bread with Strawberry Jam

>>Today I’ll demonstrate the
Keto Bread with Strawberry Jam.
This recipe is a classic
and the keto kids love it.
For this recipe, we’ll need: mayonnaise, butter,
which I’ve melted, eggs, oil, almond flour,
cream of tartar and baking soda for the crust.
And for the jam, we’ll need Walden Farms strawberry
syrup or jam, pureed strawberries, and coconut
oil and melted butter.
All of these ingredients have
already been weighed in advance.
The first step we need to take
is to preheat the oven to 350 degrees.
To begin this recipe, mix the mayonnaise,
the melted butter, the egg; mix that all together.
Then we’re going to add in the olive oil.
If you wanted to substitute for other oil
such as canola or vegetable, you can.
Mix all that together.
Since we melted the butter ahead of time,
it’s evenly combined.
If you were to mix this right out of the refrigerator
with hard butter, it wouldn’t mix as well
as you’d like it to because you want to be
sure that the butter is throughout the entire
mixture.
You don’t want any clumps.
Then we’ll mix in the almond flour.
If you were to substitute with the other flours
such as hazelnut flour or soy flour, you could
absolutely do that.
However, just be aware that it will change
the texture of the bread after it’s finished
baking.
Now, we add in the cream of tartar
and the baking soda.
What this does for the recipe is it actually
helps the bread rise in the oven.
If you don’t use it, the bread might be a
little more dense and it might not rise as
much as it would if you had added them in.
So as you can see, mixed it all together.
It’s moderately thin; it’s not too thin though.
Alright, so I have sprayed a silicone mold
with nonstick cooking spray.
You can use any mold; you can use an
aluminum pan if you choose.
We just chose this one because it’s long and
it’s somewhat in the shape of a loaf.
Just be sure that whatever you do use, be
sure to grease it.
Pour the batter right into the mold.
Be sure that you evenly spread out the batter
in the mold, because if you have one side
that was higher than the other, it actually
might affect the baking process.
One side might bake faster than the other
which can result in burning, which of course
of you don’t want burned bread.
OK, now that we’ve finished that, we will
put this in the oven for about 15 to 20 minutes
until the top turns a golden brown color.
Now, we’ll begin making the strawberry jam.
We’ll mix together the Walden Farms strawberry
syrup.
You can also use alternatively the Walden
Farms strawberry jam, which is thicker in
consistency; it’s actually
what’s listed ontheir recipe.
However, we’re using the Walden Farms strawberry
syrup just to show you what it looks like.
It is actually a syrup consistency, which is
great for the jam because it spreads on very
evenly and nicely.
We also have melted butter and coconut oil.
I’ve melted them ahead of time.
Be sure that they are melted or very soft
before you begin mixing.
And then we have our fresh pureed strawberries.
All this is, is it’s regular sliced strawberries
you buy in the grocery store that I put in
a food processor.
All you do is you mix it, you press the on
button, and it actually turns into this consistency
with no water added to it.
Strawberries are very high in water content,
so it’s perfect for recipe such as this.
Then we’ll mix it.
Mix it all together and as you can see, it’s
a nice bright red color.
And since there’s so much strawberry in here,
it really does taste like a strawberry jam.
You wouldn’t even notice that this is keto.
It tastes sweet because it has the natural
sugars of strawberries as well as the sweeteners
that are included in the
Walden Farms syrup as well.
Also, if you taste it and you decide you know
what this isn’t sweet enough, you can of
course add other sweeteners such as the liquid
Stevia or DaVinci vanilla sugar-free syrup
is also very good for this recipe.
OK, and that’s how you
make the strawberry jam.
And now we’ll get the bread out of the oven.
The bread is all done baking.
So carefully put that down.
We’ll gently remove this
from the silicon mold.
You want to pull the sides apart first, just
to be sure that none of it is sticking because
if you do pull it all out at the same time
without doing that, just in case there might
be a part stuck where you didn’t grease with
the non-stick cooking spray.
Alright, this seems to be good.
So we’re going to carefully
remove that from the mold.
Slide that on a plate.
Alright, so we can top it with our … the
strawberry jam or you can just serve this
on the side, depending on
what you’d liketo do.
There you go.
And it’s just like um, toast
with strawberry jam.
