Jamie cooks with Poo | Thai Massaman curry
What’s up foodtubers? Yes I am here cooking with Poo, with Poo all the way from Thailand.
And we’re going to make the most authentic, delicious recipe –
– this is the real deal guys. Some proper Thai cooking.
We’re going to cook Massaman curry.
We’re gonna be making it with beef, but you can use any meat you like.
And you’re gonna love it.
Thank you for being here.
It’s so nice to have you.
So basically we got the spices and the fresh ingredients.
Fennel, ingredient in pan.
A tablespoon of fennel seed a tablespoon of cardamon seeds.
A tablespoon of cloves.
A table spoon of black peppercorns in there as well.
The dry ingredient stir fry, have a bit of smoke out.
Cardamon here, you can test it out.
And we peel it.
And you can see that over here that Poo is cracking them –
– and if you look in her little hand here, you want the seeds.
Poo has beautiful bashed up her cardamon seeds –
– and I’m going to put the spices in a bowl here.
What do we do next Poo?
And fresh ingredient we have: lemongrass –
– you can chop about half stick.
So you’re just using the bottom soft part.
And then: galangal.
So an inch piece of galangal.
This is very similar to ginger, if you can’t get it use ginger.
So this is hot, how hot do you want it?
A little hot?
Now over here you’ve roughly chopped some garlic and onions.
Everything put in stir fry.
This is the first time I’ve ever seen dry frying of fresh ingredients.
I’m learning as a student today.
So, is this good enough?
You know it’s just been toasted there, nice and dry.
It just opened up those flavours.
So over here what is happening then?
You’re adding just a little bit?
Yes a little bit, is easy.
And then fresh ingredient in.
In with the fresh.

So… smashed it up. Cinnamon?
Cinnamon. 1 tablespoon.

So big shout going out to all the girls watching foodtube –
– if you make Massaman curry like Poo …
C’mon Poo, this is what we got!
C’mon get those guns going.
A little bit coconut.
And fried … Massaman curry paste.
So we got about two tablespoons of your curry paste that goes in.
We’re cooking away the milk –
– so it’s just the fat left from the coconut.
And the beef in.
So we got 400g of flank steak in there.
Cook a little bit, and then add the coconut again.
Roasted peantus. Just enough.
So a big handful of roasted peanuts.
Add … water.
Half coconut and half water.
Tamarind, add a little bit first, and you try it.
You can add more…
And bay leaves.
Bay leaves. We love a bay leave.
And … sugar.
This is palm sugar, yeah?
In most of the western world we use refined white sugar.
This hasn’t been treated so much, so…
Sometimes no have, you can use white sugar. Similar.
Now over here, you’ve roughly chopped some onions –
– and some potatoes.
That is a white-y potato, like a new potato.
Fish sauce. How much?
This whole Massaman curry is about balance, isn’t it?
Not hot, spices, sour, sweet and salty.
Ok, in with the onions.
So guys, we turn this right down now.
We let this just blip away and tendarise that meat –
– for about an hour. I’ll see you in an hour.
So, let’s have a look –
– you can see it’s reduced down now.
What do we serve it with Poo?
You can serve with white rice.
This is good.
It is the most elegant, silky, layered kiss –
– and cuddle of a curry …
… that I’ve ever had.
