INSTANT POT Chicken and Vegetables | Low Carb Recipes

hey guys it’s Leigh and today I have
another kind of throw it together dinner
for you I had another one the turkey
fajitas soup that I will leave linked up
in the right hand corner of your screen
right now so it’s getting later in the
day
we need something tank for dinner and I
really don’t have anything ready I
hadn’t planned anything I really need to
get better at menu planning so anyway I
looked in the freezer and I found this
chicken that I had gotten at Target on
clearance
always check target’s meat department
for the clearance chicken this is frozen
I also have some homemade chicken broth
that I made in my instant pot I have
some garlic and some onions and I’m
going to look through my spice cabinet
and I’ll be right back
okay I had a look through and I’m going
to add some black pepper some ground
sage that always works really well with
chicken and beef actually a little bit
of poultry seasoning and a shot of
Tabasco because my husband likes things
spicy and then after it’s all done I’m
going to taste it and if it needs salt
I’ll add it then I’ve added the frozen
chicken to the instant pot and this is
the instant pop duo mini I have the
little tiny one and if you’re interested

gonna add in my stock and this is how
you know it’s good stock made from bones
and I do have actually a recipe for that
as well but it’s nice and jelly so
that’s how you know it’s good anyway I’m
gonna add a few spoons of this it will
turn the liquidy as it heats up I’m
going to add in a few shakes of the
poultry seasoning now be careful with
this stuff because some of them this one
doesn’t but some of these the first
ingredient is salt so just be careful
unless you like things super salty I’m
gonna add in some black pepper a little
bit of sage and a couple of shots of
Tabasco next I’m going to add in the
equivalent of I’ll call it three cloves
of garlic crushed garlic and a handful
of frozen chopped onions you can add in
as many as you like I’m trying to keep
the carbs down they will come up trying
to keep the carbs down so I don’t want
to add in too many but I do want the
flavor from the onion you could also
just add in some onion powder and garlic
powder if you prefer I’m gonna mix this
around just a little to get there I am
also gonna add in a half a cup of water
just because I want to make sure there’s
enough liquid in the instant pot now I’m
gonna put the lid on make sure you
switch the valve to sealing now I’m
going to push pressure cook on high for
10 minutes and just let it start and
I’ll be back as soon as that’s done so
once it’s done and it has naturally
depressurized and open it up break it
apart a little bit just make sure your
chicken is completely done all right I’m
going to add in some frozen broccoli you
can use whatever frozen frozen
vegetables you have for fresh vegetables
and a bag of frozen cauliflower and this
came from Trader Joe’s it is the grilled
cauliflower the top back on it
I’m not gonna steal it this time that
I’m just gonna hit saute and leave it in
for about ten minutes okay so once your
vegetables are completely cooked you are
ready to serve here it is all plated up
I love meals like this there’s only one
pot to clean and that is amazing if
