How to Make Your Own Whipped Cream with a Whipping Siphon

a big mound of homemade whipped cream so
in my pumpkin pie choco video I used a
whipping siphon to make my own whipped
cream it was kind of a throwaway moment
I didn’t realize that so many people
would be interested in that particular
gadget and how it works so in this video
we’re gonna make our own whipped cream

before we begin I gotta let you know
this is not an inexpensive little gadget
you’ve got to be pretty serious about
what you want to carbonate or whip if
you’re gonna drop 110 to 120 dollars on
one of these things
but if you want to make your own foams
creams carbonated fruit you can actually
use these to infuse cold brew coffee
really really quickly as well you can
get specialty tips on it so if you want
to make your own and I don’t know how to
do this yet keto cream puffs you could
use a special tip to fill your cream
puffs with this hahaha a number of years
ago I really got into Modernist Cuisine
or molecular gastronomy which looks at
some of these sciency aspects of food
and some of the interesting
transformations that you can create one
of the first tools I bought was the
whipping siphon and as I said in the
intro not cheap this is the ISI whipping
siphon which is sort of the high end and
it’s a hundred and ten hundred and
eleven dollars there are cheaper ones
out there I will link to the one this
one down in the description below
what a whipping siphon allows you to do
is with either a nitrous oxide or carbon
dioxide you can create a lot of
interesting things so with nitrous oxide
combined with any sort of fatty liquid
you can create foams so whipped cream
would be an example of one of those I’ve
also made a very light and fluffy
hollandaise as well as a guacamole that
comes out just pillowy light out of this
thing if you’re using carbon dioxide you
can create things like carbonated fruit
watermelon works especially great for
this although that’s really not Quito
you can do strawberries raspberries and
it’s really kind of wild you once you
carbonate them you put them in your
mouth and they tingle almost you know
like pop rocks you can also very rapidly
infuse flavors into liquids for example
if you wanted to create a garlic infused
olive oil you put olive oil in here some
garlic whatever other herbs you might
want pump a couple of cartridges of co2
into it and a couple hours later you’ve
got an infused oil rather than several
days later but for this video we’re just
gonna whip up no pun intended some
whipped cream and I think we’re gonna do
it chocolate flavored you can really use
any flavor of artificial sweetener drops
Devia etc that you want but we’re gonna
go with chocolate I think it would go
pretty good on the pound cake recipe
that’s coming later this week for the
sake of this video we’re gonna make a
full batch which would be up to this
line right here where it says half a
liter to this we’ll add a generous
squirt of chocolate stevia tightly screw
on our lid then insert a nitrous oxide
cartridge into the container and screw
it down tightly you may have just heard
the gas go in a good shake for probably
30 seconds then we’ll add a second
cartridge and shake vigorously for
another 30 seconds I’ve seen some videos
where they recommend shaking it upside
down I don’t know if that makes any
difference or if it’s just something to
do so you don’t get bored over the
course of 30 seconds and if you’ve ever
tried making mason jar ice cream you’re
familiar with the fact that this gets a
little bit tiring after 30 seconds our
whipped cream is ready
hmm Wow I really like that it’s so light
so creamy well I mean it’s whipped cream
so naturally but a little bit of
chocolate stevia mmm good stuff I’m
gonna throw the rest of this in my
coffee so that’s it the whipping siphon
didn’t really mean to introduce this to
the keto community but since some people
were curious this is it if I find that
more people are interested in the use of
it perhaps sometime later I will do like
that whipped guacamole or holidays whip
or some other interesting recipe
hopefully that is Kido that utilizes
this probably for most people though not
