How to make keto cauliflower rice

One of the biggest challenges of following
a low-carb keto diet is missing out on your
favourite staple: Rice.
The followers of the Ketogenic diet have been
using the cauliflower rice or grated cauliflower
as a substitute for rice.
Most people eat this as an accompaniment to
the main meal.
However, my recipe for cauliflower rice elevates
the taste profile of the dish.
Also, this variation can be had as a breakfast
or as an evening snack.
With just a few essential ingredients one
can make great tasting ketogenic cauliflower
You can personalize this recipe by adding
veggies of your choice.
Feel free to replace the almonds in the recipe
It’s time for us to indulge in Yummy Keto
by Chopping the cauliflower into medium-sized
Wash these florets under running water.
Blitz the florets in a food processor and
pulse until you have a rice-like or couscous
You can also get the same texture by manually
grating the cauliflower.
We start our dish by melting the butter in
Add mustard seeds and sauté in butter till
Now; add in cumin seeds and chopped ginger
followed by curry leaves and green chillies.
Add onions and sauté
till the onions change colour.
Add the grated cauliflower to the pan and
sauté for a minute.
Mix-in the all the vegetables now and sprinkle
sea salt as required.
Cook for another minute.
It’s time to introduce the chopped tomatoes
into the frying pan.
Once the tomatoes are tender, add in the blanched
and sliced almonds.
Pour in some water to prevent the rice from
sticking to the pan.
Reduce the flame and cover the pan.
Let the cauliflower rice cook for another
Keep stirring every few minutes to ensure
that nothing sticks to the pan.
Garnish with fresh cilantro & serve.
