Green Bean Artichoke Casserole Recipe – Low Carb Keto

Welcome all! Papa G here. Today I present
low carbohydrate green bean artichoke casserole.
A wonderful combination of flavors you
can serve alongside your favorite entree
or as a meal all on its own. With just
under four and a half carbohydrates per serving,
it makes a great low carbohydrate option.
Let’s get started. We’ll begin by placing
two tablespoons of unsalted butter to a
large frying pan on medium-high heat, Add
1 chopped medium onion and saute for
about 3 to 5 minutes. Add 1 tablespoon of
minced garlic and cook an additional 2
to 4 minutes, or until the onions are
tender and translucent. Once the onions
are cooked, turn off the heat and set
aside. Roughly chop 1 fourteen ounce can of
artichoke hearts. Add the chopped
artichokes to a large mixing bowl. Next,
add 2 fourteen ounce cans of french cut green
beans and give that a quick mix. Add the
sauteed onion and garlic and give
another mix. Now add about 1/2 a cup of
cooked bacon pieces; 1/4 cup of sliced
almonds; a generous amount of salt; some
black pepper; garlic powder; a little dried
basil; about a cup and a quarter of
ground pork rinds; and finish with a half
a cup of grated Parmesan cheese. Mix
thoroughly until well combined. Now we’ll
add some extra virgin olive oil and a
little apple cider vinegar. Give one
final mix to combine. Pour the mixture
into an 8 x 11 inch baking dish and spread
evenly. Mix a quarter cup of grated
Parmesan cheese and ground pork rinds
and sprinkle evenly over the top. Place
the casserole in the middle of a
preheated 325°F oven for about 30
minutes. When it comes out, let
cool just a bit and serve warm. This
casserole makes a great low carbohydrate side
dish or a wonderful meal all on its own.
