GLUTEN FREE CORN MUFFINS RECIPE

Hi and welcome back to my channel today, we’re going to be making gluten-free corn muffins
That’s right. Gluten free. I’m here to tell you that they are going to be easy
delicious
So yummy and moist, so let’s get baking
I’m Peggy and welcome to a real kitchen, okay
So have you ever been to someone’s house and they had cornbread or corn muffins sitting out and they look so delicious
But they were full of gluten. Well, these muffins are gluten free and
delicious and like I said, super simple to make so
Let’s get started. Okay, so let’s get started with these easy and delicious corn muffins
First of all, we’re gonna start off with one cup of cornmeal then we’re gonna add 1/2 a cup of sugar
1/2 a cup of gluten-free baking mix now when I say baking mix I can I mean either gluten-free
flour
Coconut flour almond flour any kind of gluten-free flour that you have around I’m using almond flour
Then I’ve got a teaspoon of baking soda and
one of the half teaspoons of baking powder a teaspoon of salt and
3/4 teaspoon of xanthan gum
What I’m going to do is I’m just going to kind of mix those together
And in this medium-sized bowl we’re going to put one and a half cups of
buttermilk, I
Didn’t have buttermilk. So what I did is I used a one and a half cups of regular milk
and then I added two tablespoons of
white vinegar
And then I’ve got a quarter cup of butter
melted
and one egg
So whisk these together?
Okay, now we’re gonna mix the wet with the dry so pour in the wet ingredients
Now keep in mind that batter is going to be very thick

Muffin is is it corn muffins blueberry chocolate that I’m gonna be making a lot of gluten-free
Recipes on my channel as well as gluten-free muffins. All right
So look at that nice and thick, okay
And we’re going to get some muffin tins and we’re gonna spoon those into the muffin tins
Okay
so I have greased about here really greased it because I do not want these to stick and I always use a
Ice cream scoop. I’m going to scoop these in
Okay, and can I make muffins I love to make mini muffins
Never obviously that mini-muffins are going to bake a lot quicker than the regular size muffins
Okay. So now I’m going to put the muffins in a 350 degree oven and the large muffins should take anywhere from 20 to 25
minutes
And we’re off with little bananas and mini muffins, but I’m gonna check them in about ten minutes. Okay?

Look how cute they are. This is why I always make mini things
So we’ll leave those there in about eight or ten more minutes for the big muffin

Okay, so now I put these out on a nice little baking sheet or I’m sorry a cooling rack to cool and now comes my
Favorite time tasting. I like to eat my corn muffins with a little bit of honey with a little drizzle of honey
So let’s try these. I do a little drizzle of honey top of them. Alright, let’s give it a whirl

But these would be moist and delicious. These are going to be added to your
