Easy Keto Chili without Beans

– Hey, guys, today on
Low Carb with Jennifer, I’m going to show you how I
make my double meat keto chili. It has no beans of
course because it’s keto. So let’s get started. So for our double meat
chili, I use ground beef and I also use stew meat and it just gives it a little bit more ’cause we’re taking out the beans, you want something a little
bit more in your chili so I think stew meat cut into
smaller pieces is perfect. It’s so delicious. So what we want to do first
is brown the stew meat. I’ve got a Dutch oven here and I’m going to put in some avocado oil and I’m going to season my
stew meat with some salt. Going to toss the salt in the stew meat and now we can add it to the skillet. I’m going to do this in batches and you just want to cook
it until it’s browned. It’s not going to take very long at all. Okay, we’ve got our meat
all browned, our stew meat. So I’m going to remove it from the pot back into the bowl. I cleaned the bowl. Now I’m going to put the
stew meat in this pot. Okay, now we’re going to
start cooking our onions and I’ve got red bell pepper
here that we diced up. We’re going to cook
these until they’re soft. Okay, we’ve got our
peppers and onions softened so I’m going to add in our seasonings. We’ve got garlic. We’ve got onion powder and garlic powder. Chili powder. Smoked paprika. And cumin. This recipe uses a lot of spices. It’s got so much flavor. It’s delicious. And then I put in some tomato paste. So we’re going to just stir this up so we don’t have all of
those raw spices in there. Going to need to cook my ground beef so I’m going to add in my ground beef and we’re going to cook that
until it’s cooked through and crumbled and season it with some salt. Just want to break it up and mix it in with the onions
and peppers and spices. It will release some juices and that’s going to help
scrape any stuck on brown stuff that’s on the bottom of the pan. So much flavor. Okay, now our last ingredient
we’re going to add in is a large can of fire-roasted
tomatoes and stir that in and scrape the bottom for
anymore brown stuck on bits. This smells so good, you guys. Now, we’re going to add the
stew meat back to the pan. I’m going to turn the
heat down to a simmer and this needs to cook
for at least an hour. You want it to cook until the
stew meat is nice and tender. So check it after an hour. You want to keep the lid on it. So I’m going to put the lid
on this and let it simmer. Guys, this chili is done
