We’re making our easy avocado egg salad.
Hi guys, a couple videos ago we shared how
to make one of our favorites, how to make
Avocado pasta, which you absolutely loved
so we wanted to share another recipe using
avocado so we are making avocado egg salad.
Because she has an avocado problem.
I do, I love avocados.
So lets go make this one. Let’s do it, it’s
This egg salad combines two of our favorite
things: eggs and avocado.
We need hard-boiled eggs so bring the eggs
and water to a boil on the stove. Once it
gets to the boil, cover the saucepan with
a lid and slide the pot off of the stove.
These are large eggs, so if we wait about
12 minutes, they’ll be perfect.
Once cooked, cool the eggs down by submerging
in cold water.
For the egg salad, we scoop the flesh of an
avocado into a bowl
then add a little mayonnaise and lemon juice.
If you’re looking for a mayo-free version,
simply leave out the mayo, which just makes
the egg salad a little more creamy or swap
the mayo for Greek yogurt.
We love a little crunch, so we add some finely
and to freshen the salad up even more, some
fresh herbs. Chives are my favorite, but parsley
or basil would both be delicious.
Peel and chop the eggs from earlier — not
my favorite task in the kitchen, but worth
it for this egg salad! — Before chopping,
rinse under cool water to remove any leftover
bits of shell. Then chop the eggs into small

pepper. Then stir everything until well mixed,
don’t forget to taste for seasoning — you
might need to add little more lemon or salt
— then serve.
This time we’re piling it up onto sliced
bread, but you can enjoy it however you like
— a spoonful on top of salad would be nice!
