Delicious Chips & Guacamole Recipe!

we watched the holiday challenge video that
dr. Gundry did and excited about that
excited about the tips one thing that
really struck me and I know Dave
actually had said this to me years ago
that before he eats him now and this was
years and years ago he would always
drink a full glass of water so I really
like the idea of drinking a cup of water
and eating a handful of nuts before you
go to a holiday party because you’re
gonna go fall and not hungry and I think
it’s always a mistake to go to a holiday
party when you’re hungry because of
course you’re gonna eat more than you
intend to eat I also really like the
idea of filling your your plate mostly
full of healthy choices and then just
leaving a quarter of the plate for the
are there not so good things but I like
that because you know it is important
and that is one thing I love about the
diet is it’s not about restricting your
food you shouldn’t feel hungry on the
diet you should feel satisfied and not
like you’re starving to death so that’s
important to remember as well and I was
just gonna say I like the thing of
trying to lose 5 pounds I actually don’t
need to lose 5 pounds but I do have a
little bit of belly fat that I would
like to lose so it’s not so much about
the weight loss as it is about I have
not started exercising yet but I would
like to even if it’s just doing some
simple stuff so I think especially now
that here in Arizona it’s nice and
amazing too whether it’s just beautiful
now amazing so we can go pretty much
exercise any time to think that’s
something we should try and do
we’ve been pretty strict on the diet you
know it’s been about a week since we did
an update I all week I did really well
except yesterday I did break down I was
feeling super weak we’ve been a little
bit sick both of us and I was just
feeling super weak and kind of ornery
and it had a moment of weakness and
broke down bought some candy and some
caffeine you know like an energy
drink and yeah and I felt great for like
you know a few hours and then all night
I’m just tossing and turning my guts
been rumbly all day and you know that’s
just what you do but just some of the
tips in in Dr. Gundry’s you know
holiday advice videos just pick up and
move on so we’re gonna try and do that
the other things we thought we would do
because we’ve been you know originally
when I did the the daily videos I didn’t
really plan on you know continuing them
because I didn’t know there would be so
many people interested so we just
thought super happy about that yeah so
we’re glad that a lot of people are
doing it because it helps us honestly
having so many people you know doing
this diet with us and kind of
experimenting and learning different
things staying on target helps us to do
it as well so we appreciate all your
feedback so what we’re gonna do is dr.
Gundry said he’s gonna be releasing
through his various media outlets some
different recipes and tips so we’re just
gonna you know whenever a new recipe
comes out we’re gonna try it out
ourselves maybe what we think yeah
exactly so today there was a recipe that
two recipes that I’ve seen on his
website
that I’ve been wanting to try one of
them was Gundry’s famous guacamole
and the other one was a recipe posted a
while back from a different website for
to the name on it somebody is pita chips
yeah somebody’s pita chips so we’re
gonna do the pita chips with Gundry’s
guacamole and that will be our dinner
for tonight also one thing Dave kind of
touched on that I really want to
emphasize because I think and I don’t
know if maybe this is just a woman thing
or just kind of a thing in general some
people struggle with he said and I know
that I am like this a lot of times if I
have a bad day I break down I have like
a piece of candy or something it’s easy
to say oh my whole J is messed up now
it’s all gone downhill I might as well
eat all the crap I want to no don’t do
that accept your mistake and say you
know what dang I wish I wouldn’t have
ate that candy but you know if it’s the
end of the day or something and say
guess what tomorrow tomorrow I’m
starting with a clean slate don’t carry
that guilt with you and don’t let that
be a reason to continue to eat poorly
throughout the holidays I really like
how he touched on that because I think a
lot of times that’s so easy for me
something I do is just to say well I’ve
totally messed up now I might as well
just not eat healthy anymore because
don’t do that accept your mistake set a
new challenge start the next day with a
clean slate and start over fresh you can
start over fresh as many times as you
want to that is beauty that’s the beauty
if you mess up every single day guess
what tomorrow is a new day and you can
start with a clean slate so always
remember that yeah
good advice because that definitely was
me exactly all right well let’s go make
the guacamole and chips sounds good all
right okay so here’s the two recipes
we’re gonna make we’re gonna make
Esther’s paleo pita chips and here’s the
ingredients
and how to make it so I’m gonna work on
this recipe and then while I’m working
on that recipe
Jan is gonna work on making dr.
country’s famous guacamole and here are
the ingredients for that that she’s
going to start working on
all right so the first thing we need to
do says is mix all the dry ingredients
so we’re gonna start with 2 cups of
almond flour next up it says 1/2 a
teaspoon of chili powder and this is
what we have half a teaspoon of this
next up is a half a teaspoon of garlic
powder 1/2 TSP of onion granules and
next up is 1/2 a teaspoon of paprika
pretty easy recipe 1/2 a teaspoon of
everything about half a teaspoon of sea
salt then it says to whisk until lumps
of removes so let me do that all right
it’s looking pretty lump free the next
step is to add in the egg white I’m
calling in the big ones to do the egg
white because Jann’s better at doing
this than me lots of practice made lots
of noodles in my life I always kind of
roll the egg around but you want to do
it just very gently because if you are
too rough and aggressive with it it will
break the yolk that’s my problem I
always break it no matter how ok so now
it says mix well and then form a disk ok
so now I’ve got it kind of mixed into a
disc I’m gonna put this between the
parchment paper I have here it’s kind of
a dis smell the garlic in it yeah
what thickness you want it to be again
it’s probably good with the shape of it
you might not be able to do perfect
triangles but really it’s not even about
the shape you know just doesn’t seem
like it’s going to make very many and
this is such a great snack to have a lot
of times around the holidays people love
to kick back and watch movies and if
you’re missing like having popcorn snack
or something this would be awesome to me
sort of spread
here on the cookie sheet and just try to
make them so they’re not really touching
so I’m here in the middle are definitely
thicker than the ones on the edges and I
took a lot of the crumbs and tried to
smash out and make new crackers some of
them didn’t smash together really well
but let’s cook them up see how they turn
out just look like a lot of onion that’s
probably enough yep great I’m so sad
there’s the minced onion now I’m gonna
start with a lime juice so far I’ve cut
up three lines and we’re gonna see how
much juice we can get out with these
three
oh that’s the chips let’s give him a
look they’ve been in there a little over
9 minutes looking kind of golden brown I
might leave them in there for just a
minute longer torque a couple of the
lines Boston came out there
they’re in there about ten and a half
close to 11 minutes this honestly is
probably one of the best things I’ve
ever got it’s actually a pepper chef
thing but it’s nice because you it chops
and it cuts at the same time so it’s
super easy just to do that and kind of
mince that and get everything so I’m
going to cut off kind of a bulk of it
and then I’ll go through and more finely
chopped so there’s not any of the big
chunks so as you can see we’ve got that
chopped up pretty well now I’m going to
go ahead and start on the avocados I’m
going to just first cut up a cut them in
half break them apart then what I like
to do is just score down through and do
another score just to have them in
chunks and then I’ll grab my spoon and
then just scoop everything out from
there so that way you know as you’re
mashing it up and everything at least
you got a good start on that gently work
out the seed and start mashing up my
avocados
got my fourth a cup of lime juice I’m
gonna add that and I’m gonna go ahead
and add my cilantro also I’m going to go
ahead and add one clove of garlic Dave
actually likes to get the garlic that’s
pre pressed into a jar but oh I think
this just tastes so much better I’m
gonna go ahead and add the onions we
didn’t quite do the full onion because
it was a pretty large onion so we’re
gonna splendid in we’ll go ahead and add
some spice and next thing I’m gonna add
in is just pepper now I’m gonna go ahead
and add some salt and that’s a half a
teaspoon next we’re gonna go ahead and
add our cumin and it’s 1/4 of a teaspoon
smells good
also we want to add 1/4 of a teaspoon of
paprika this last one is really cool
it’s made here in Arizona in Mesa and
we’re gonna actually add a tablespoon of
that done wakka moly ok here’s the end
result here are the crackers and they’re
not super crispy but they’re a little
bit maybe they’ll get crispier as they
cool a little bit more there’s the
guacamole the Jen made and Jam is gonna
be the first to try it I actually kind
of broke this one so
to use another one so I can kind of feel
how strong it is actually omen scooping
up the guacamole that’s good
I mean it’s you know not breaking
falling apart so that’s a good sign it’s
really good good welcome like just
amazing until it’s gonna be hot left
right and yes we already do have our
house decorated for Christmas
yeah honestly these chips are way better
than the ones that are in the book I
think yeah those ones in the foot we’re
super over like way too flavorful for me
like I could just eat these as a snack
like they’re just good and the guacamole
is really good I yeah thumbs up on this
recipe definitely so definitely if it’s
more than two people you want to double
the chip recipe guacamole you’ll be fine
I am definitely glad we didn’t add more
onion because it definitely has a little
bit of an onion bite to it
mmm not bad not that it would deter me
from eating it but if you are not a big
lover of onions probably don’t you know
check the size of your onion before you
add the whole thing to the guac mix as I
said this is what we ate for dinner and
this is how many crackers we have left
after Jen and I are done
and this is how much does it welcome
only we have left so we have quite a bit
of leftover so this stuff is pretty
filling actually and I was actually
really hungry because this is the first
meal that I eat today and it is dinner
time I’m not a huge fan of cilantro I
know some people absolutely love
cilantro so if I were to make this just
for me I would probably put about half
the cilantro in and even maybe half the
onion anyway I hope you enjoyed this
