[Music] hey pit bosses what is it today we’re going to do deep fried steak experiment I got a beautiful Uruguayan ribeye we’re going to cut it into steaks one we’re going to grill up and the other one we’re going to deep fry yeah we’re gonna fry a steak when we were in search of the perfect crust on a steak I got so many comments the best way to do it is to fry a steak and I never give it a second thought but on Instagram I saw a steak being deep-fried by Camilo and I thought well maybe I should give it another thought and give it a try see if it actually works but I don’t think it’s gonna be like fried chicken Martha this is the eye and this is like the beautiful fat cap that’s in there these are gonna be really tasty steaks we are going to cut this into three steaks one for on the grill one for in the fryer and one backup we are going to fire up the barbecue with some cottage of big-block light it up 90 DAP pop-pop-pop fire our barbecues good and hot now we’re going to start up our deep fryer I basically only use this deep fryer from when I’m making olive oil and now we’re going to use it on a steak well put in some sunflower oil now let’s turn this thing on I want to set it at a high temperature I’m gonna go for a hundred and eighty degrees I’ve got my grill set up with an indirect and a direct heat with a lot of heat on the direct so the deep fryer is ready to go this is the moment we’re going to put in our steaks fry them up this looks really freaky of course there’s a lot of moisture in that steak that’s coming out and it’s like all those water’s coming out it’s got that beefy smell fried beef amazing I don’t know how long this is going to take but we got to figure it out Wow look at that this thing is really really quick let’s flip it around make sure I see on the bottom it’s getting a little bit more crispy this is the first time for me so I’m kind of excited about this process and also I’m excited about what I’m seeing right now Wow look at that look at it crust look at that color this is absolutely beautiful both sides look really good now we’re going to place this over indirect heat on the grill let it come up to temperature let’s quickly check the core temperature making sure that we haven’t reached our desired temperature of 54 degrees Celsius yet nope we’re still good at 20 degrees Celsius now let’s hear the other steak directly over the charcoal I’m rotating my steak as I go just to make sure we maximize that crust of the cast-iron sear that crust looks really good I’m moving it over to the indirect side I can already see the difference between these two steaks we got a beautiful brown mahogany color on that fried steak and a more darker one from that cast iron Cerre it’s much more roasted let’s close the lid and let the steaks come up to temperature our deep fried steak has reached the temperature of 53 degrees Celsius we’re going to give it a little bit of rest and then we’re going to slice into it or wait for our grilled steak to get up to the same temperature sprinkle on a little bit of salt our grilled steak is now ready as well look at that let’s put some salt on it and now we gotta wait for at least five minutes look at that they both look beautiful there are more juices on a grilled steak then that there are on our fried steak just gonna flip this one around so they look exactly the same now all we have to do is slice into it and taste it first a deep fried [Music] now the grilled see how easy it is to slice through the grilled version first is the deep-fried version let’s take out a piece of both look at that actually they both look good they kind of look the same inside the crust on the fried one it’s definitely a lot harder even after we’ve set it over indirect heat and got the opportunity to regain some of that moisture again the fried one has more gray on the outside though and that’s very logical because we’re searing in a ton lower temperature we’re searing it at 190 degrees Celsius our grill grape is much much hotter than it at least 3 times as hot now of course we got a try juicy that still is looks really really good [Music] when this steak taste is really good and it’s so tender [Music] you got a good amount of crust now let’s try a grilled steak and it looks just as good as the fried one across this a little less thick but it’s juicy tender I absolutely love that fried steak it’s crunchy on the outside and that makes for a really good steak eating experience and I love the grilled steak as well you know it’s less gray on the outside and that makes it even more tender but the fried steak this is something else this is really something else I love it but then again are you really gonna fry your steak I think I’m gonna stick with a cast-iron pan with a little bit of oil in it maybe it’s a good idea to draw out a little scale of the difference between deep-fried and grilled if this is a good steak and this is a bad steak then our steak was all the way up here let’s say 80% really really good steak and then we fried it and the steak became just yeah it’s a little bit better so in all of its scale it may be may be improved by 5% now that we’ve got our experiment out of the way let’s make a deep fried steak sandwich well put a pan directly over hot coals add a little bit of olive oil cut the mushrooms add them to the pan add some tomatoes as well a little bit of salt a little bit of pepper and let this roast we got these beautiful and that’s they’re called biscotti bowl but basically they’re bread that you can toast gonna put them on the grill toast them and start working on our cream cheese we’ll start off with some fresh spices I got lemon verbena here I don’t know if that’s the right English term for it but it smells like lemon a little bit of parsley that’s some fresh thyme bundle all of that up and chop it fine put that into our cream cheese and a little bit of pepper and of course some finishing salt mix that up we roasted a little bit of onion and garlic that smells so good it completely caramelized look at that absolutely fantastic and that was very easy we just give it a little push do you see the roasted bit separate from the cooked bits look at this roasted garlic also done this is backing so much flavor it’s just crazy well chop this fine [Music] we chopped it but we can also push it and it turns into a puree look at that we want to quickly taste this it’s gonna be perfect for our cream cheese what we want to give it a little bit of seasoning before we put it in put in a little bit of salt and a bit of fresh ground pepper fold that in let’s add that to our cream cheese our buns are toasted absolutely perfect now it’s time to start frying our steak we’ve got a beautiful crust on the outside of our steak now we put it on the grill over indirect heat our steak is done and Wow we’re resting it we’re going to build up our bun first we’ll put on some cream cheese some mushrooms our tomatoes put the steak on top a little bit of salt some cream cheese on the top bun put the cap on now that is a beautiful button let’s go to then ham and take a look aside time for our taste test there we go now then it’s a seriously good steak sandwich we’ve got that crisp from our steak and it works really well in this sandwich the cream teas does an amazing job of bringing all the flavors together the mushrooms and tomato bring that balmy flavor man this is a good sandwich besides the frozen steak experiments this was the second craziest experiment that I did so far I hope you guys enjoyed it and you leave
