Crispy Crunchy Low Carb Onion Rings – Keto Onion Rings
Welcome all! Papa G here. Today I present
crispy, crunchy, low carbohydrate onion rings.
This is a great recipe to ride sidecar with
any low carbohydrate wrap or sandwich – or serve
them by themselves alongside my Creole
sauce for a flavorful appetizer. With
less than 2 grams of carbohydrates per five
ring serving, it’s a fantastic low carbohydrate
option. Let’s get started.
Begin with a large peeled onion and
slice into medium to large sized rings.
Remove and discard the middle of each
slice and separate the rings by gently
pushing them apart. You should get about
30 rings or so. This amount could be more
or less depending on the size of your
onion and how big you make your slices.
Once you’ve separated the onion, set
aside as we work on our batter. To a
medium mixing bowl, add 6 tablespoons of
zero carbohydrate, unflavored protein powder;
baking powder; baking soda; a little salt;
half a teaspoon of xanthan gum; and
combine thoroughly with a whisk. Now add
two lightly beaten eggs and finished with
2 tablespoons of sparkling water. Mix for
about a minute or two until fully
combined. Add one 3 1/4 ounce bag of
pork rinds to a food processor and
process until fully ground. Place the
ground pork rinds into a shallow dish
and add a quarter cup of grated Parmesan
cheese; a little salt; and some cayenne
pepper. Mix well to incorporate. Place
some onion rings, a few at a time, into
the batter and toss to coat. Dredge the
battered rings into the pork rind
mixture and coat each ring. Repeat until
all the rings are coated. Fry the onion
rings in oil heated to 375°F for a
minute or two or until golden brown.
Drain on a paper towel and let cool just
a bit. These are best served warm
alongside my homemade Creole sauce. I’ll

for that recipe. These rings are so good
they’ll rival the texture and taste of
their high carb counterparts. Crispy,
crunchy goodness. There you have it folks!
