Creamy Banana Pudding with a Peanut Butter Wafer Crust – Low Carb Keto Dessert Recipe

Welcome all! Papa G here. Today I present
my Creamy Banana Pudding with a Peanut
Butter Wafer Crust. Two great flavors
that go together so well, it would make
Elvis smile. Let’s get started.
Begin by adding some almond flour to a
food processor; a sugar substitute equal
to six tablespoons of regular sugar; a
little salt; and some all-natural creamy
peanut butter. Process this for about
thirty seconds to combine. Use a spatula
to scrape down the sides then continue
to process until the mixture comes
together and looks something like soft
butter. Pour the mix onto a work surface
and mold into a circular shape that
resembles a big cookie. Use a large knife
and cut into 8 equal pieces. Place eight
8-ounce ramekins on a baking sheet. Take
each wafer section and flatten. Place in
the bottoms of each ramekin and press
with your fingers to flatten further and
bring to the edges. This mixture will
have enough oil from the peanut butter
so there’ll be no need to grease the
ramekins. Place in the middle of a
preheated 350°F oven for about 12
minutes. Remove and let cool. Add one can
of unsweetened coconut milk to a sauce
pot; some heavy cream; a sugar substitute
equal to one cup of regular sugar; 4 egg
yolks; a little salt; and some xanthan gum.
Mix with a whisk to combine. Using medium
heat, stir and cook until it comes to a
simmer.
Reduce the heat to medium-low and
continue to cook and stir until it
begins to thicken. This should take about
ten minutes or so. Now turn off the heat
and let cool just a bit. Add some banana
extract and continue to stir to combine.
Pour the pudding mix over the top of
each peanut butter wafer. Place a piece
of plastic wrap over the top of each,
being sure it makes contact with the
surface of the pudding. This will help
prevent the infamous “pudding skin” from
forming and keep our end product nice
and creamy. Place the pudding in the
refrigerator for at least six hours to
overnight to set. When it’s ready, remove
the plastic wrap;
add some sugar-free whipped topping and
enjoy! There you have it folks! My creamy
