Cookies and Cream Protein Donuts! The Diet Kitchen/Mind Over Munch Collaboration!
Alyssia: Hello! Today is a very special video
posting because I am doing a type of collaboration
that I have never done before. Simon from
The Diet Kitchen and I have teamed up to bring
you some recipes. We have challenged one another
to make each other’s favorite foods. You’re
going to have to head to Simon’s channel to
see what I made for him and trust me, you
do not want to miss it. But right here, right
now, Simon is going to show you his very special
doughnut recipe that he made for me. Because
you all know I love doughnuts.
Simon: Hi guys. My name is Simon and I’m from
my channel The Diet Kitchen and I’m here today
to bring you a recipe. So thank you very,
very much Alyssia for having me do a recipe
on your channel today. I really, really appreciate
it. Today’s recipe is going to be what we
call over on my channel ‘Pronuts’ or ‘Protein
Doughnuts’, as you probably know them by.
You don’t have to put protein in there if
you don’t want to. They could just be regular
old baked doughnuts. And to flavor, we’re
going to go with today, it’s going to be like
a cookies and cream style frosting.
Absolutely amazing. Really, really good flavors
going on. Macros are incredible. They’re very,
very macro friendly. If you did like this

over there. And without further ado, let’s
do this recipe. Alright, so the first thing
I’ve done is preheat my oven to 175 degrees
centigrade which is roughly 350 degrees Fahrenheit.
And we’re going to take this mixing bowl.
First thing we’re going to add is 75 grams
of oat flour. Oat flour is basically ground
You could do it yourself or you can buy it
pre-ground. Yourself you could just get a
blend of food processor and just whizz it
the hell up. And to this we’re going to
add 25 grams of, this is vanilla whey protein.
Also you don’t have to add any sweetener if
you’re using protein. You can use a – you
cannot use the protein if you want to guys
– I’ve just found that it doesn’t rise as
much so it’s up to you. Next, to that, we
are going to add in a quarter teaspoon of
baking powder, a 100 grams of applesauce – this
is unsweetened. Banana makes the best baked
doughnuts in the entire world.
I’ve got a recipe on my channel for the baked
banana doughnuts with cinnamon – sugar, but
the banana is quite over powering so with
the cookies and cream it doesn’t really go
that well. And a last, ingredient we are going
to add is one whole egg. I haven’t actually
tried it with egg whites so give it a try
and let me know if it turns alright. And then
we are just going to mix it together. Okay,
lovely and mixed so we are going to take a
doughnut tray just like – this isn’t a mini
one – this is a regular sized one. And then
we are going to liberally spray with some
one calorie cooking spray.
And then what I like to do is just rub it
around the outside just so it’s coated properly
on each of the individual tins. And then distribute
your batter evenly between them. Giving out
special points for anyone that doesn’t get
anything on the side or in fact on the side
of the tray. So, like I said we are going
to go into our oven that’s been preheated
for about 8 minutes. I wouldn’t cook them
past 10. That will be it if you want them
to be not dry. So let’s go into our oven for
about 8 to 10 minutes. Beautifully cooked.
Right. What we are going to do is leave that
to cool down over here and we are going to
make our topping.
Here, this is a 150 grams of zero fat Greek
yogurt. You can use something else like cream
cheese if you have the macros for it. I haven’t
tasted the cream cheese but it does taste
really nice with Greek yogurt. And then in
this bowl I have two Oreos which have been
ground to smithereens inside the food processor,
really, really ground up. And this is optional
but I’m going to add a tablespoon – this is
my homemade truvia – paying normal price for
truvia but you can make it so much cheaper
for yourself. I’ve got a video on how to
make that on my channel so check that out
guys. And give this a little mix up. Okay,
now that we’ve made that, let’s leave our
doughnuts to cool down for just about five
or ten minutes just so we can put this on
top otherwise it will melt uncooked yogurt
and it won’t taste as nice.
Or you can leave the doughnut as is. And get
the topping all together so I’ll see you in
about five, ten minutes. Okay if you’ve got
a piping bag then that will probably be the
easiest thing to do but what I like to do
is just spread it evenly along all the doughnuts.
And once they are done like this, then just
smooth it out with the back of the spoon.
And then rinse and repeat until you’ve done
all of the doughnuts. This is pretty much
just for decoration purposes but you can do
it if you would like to.
I’ve got two slightly less ground up Oreos
and I’m just going to top these with them

might get a little bit messy I’m gonna take
the smallest bite. That’s really, really nice
