Chicken Curry – Indian Food Recipe – Low Carb Keto Recipes
Welcome all! Papa G here. Today I present a
very easy to make chicken curry recipe.
This recipe embodies all the flavor of
this classic Indian dish and still keeps
the net carbs under two grams per
serving. Let’s get started.
We’ll begin with a little prep work and finely
chop two green onion stalks. We’ll be
using both the green and white parts.
Next, we’ll need 8 boneless, skinless,
chicken thighs. You’ll want to chop these
into bite-size pieces.
Once we’ve prepped the onion and our
chicken, set it aside as we work on our
sauce. Add some heavy cream to a mixing
bowl and about 1/2 a cup of sour cream.
Mix this well until the sour cream is
completely combined. Now add a generous
amount of curry powder; some salt; ground
black pepper; some dried onion flakes;
cayenne pepper; red pepper flakes; some
garlic powder; and a little onion powder.
Give a mix to combine. Now sprinkle in
about 1/4 teaspoon of xanthan gum and give
another mix to incorporate, Set this
aside while we work on our chicken. To a
skillet on medium-high heat, add 2
tablespoons of avocado oil. Add our
chopped chicken thighs and season with
some celery salt; ground black pepper; and
some turmeric. Cook, stirring often, until
the chicken is about 1/2 to 3/4 done. Add
the chopped green onions and continue to
stir and cook until the chicken is
Don’t drain the liquid that has
developed. There’s a whole lot of flavor
in there and we added the xanthan gum to
the sauce to help incorporate and
thicken this liquid into our dish. Once
the chicken is fully cooked, add the
sauce to the skillet. Stir and cook until
it thickens a bit. Once it’s reached your
desired thickness, add about 1/4 cup of
freshly chopped parsley. You can even
substitute some fresh chopped spinach
here if you prefer. You can enjoy this by
itself or serve it over some steamed
riced cauliflower or even some sauteed
zoodles. Deeelicious! There you have it
