Keto Kitchen: Olive Oil Chocolate Mousse
Ingredients for 6 servings
150 gr./ 5½ oz dark chocolate ( I use cocoa liquor with no sugar)
100 ml./3½fl oz extra virgin olive oil
Choose the highest quality olive oil you can afford
4 large pasture-raised eggs
Your favorite keto sweetener (I prefer a blend of stevia and erythritol)
1/4 tsp. of sea salt flakes
Melt the chocolate using a double boiler or a microwave
Add the olive oil and let it cool for 10-15 minutes
Separate the egg yolks and the egg whites
Whisk the egg yolks with the sweetener and half the salt
Whisk the egg whites with the rest of the salt
Gradually pour the chocolate and oil mixture into the beaten yolks and fold to mix completely
In the end gently fold in the beaten egg whites
Spoon the mousse into 6 cups and let it rest in the refrigerator for a few hours
The result? An exquisite, sophisticated, airy mousse. You can eat it plain
or garnish it with whipped cream and/or mint leaves
