Brinjal Fry – Andhra Style – Fast and Easy
Hi Friends ! hope you all are fine. Today we are going to make Brinjal Fry.
Ingredients – Brinjal, Chillies ,Ginger,
Jeera, turmeric. For Initial frying in oil – Mustard Seeds,Urad dal and Bengal gram
All the brinjals are cut and soaked in water
if not soaked in water after cutting, they will turn a bit soar
It is also very good to put some salt while soaking in water. Now take some required oil
See I have soaked brinjal in salt water
so that they won’t turn soar. I have taken required Oil.
I have taken required oil for the fry.
Urad Dal and Bengal gram
With Brinjal you can make several dishes – with milk,brinjal deep fries,
even with fries there are different types
Stuffed brinjal curry,etc.. there are many more we can make
I will show you one after another,
we can put curry leaves as well, currently I don’t have.
we have to put salt immediately after putting brinjal pieces
Required Salt as per your taste
close the lid so the brinjals will get cooked on steam.
now to make masala – Take ginger,chillies and jeera
This will add spiciness to curry, won’t add chilli powder separately.
we will grind it manually or you can use mixie.

while doing the recipe I will share some techniques
see it will be getting cooked like this. If you put lid while cooking it will get cooked faster
after brinjal gets a bit soft, you need to put ginger,jeera,chilli powder which we have ground.
It needs to become a bit more soft
if we are putting red chilli powder we need to put at last
if we are going to put green chilli,ginger we need to put immediately after it becomes soft
Let’s allow it to cook a bit more after that we will add.
Let’s see if it is soft now or not.Now we need to add ginger-chilli-jeera masala
All my recipes are simple, Bachelors can easily cook themselves easily. So everyone follow if its possible.
if it is cooked for some more time it will be done. we will allow it to cook for some more time by closing the lid.
lets see now, now it is fully cooked. Curry is ready now
For such fries we can also use traditional red mirchi powder made during granny’s time.
That is nothing but a mix of red chilli,jeera and garlic.
we will fry red chilli and powder it along with garlic and red chilli. We call it as “Goduu karamu”

now a days as we already have red chilli powder, we will fry it and add garlic and jeera powder while removing from stove. This is one method.

Curry is ready now. before taking it off will add some coriander.
Switching off Stove as curry is ready now.
