Salam. I’m making my Keto Pound Cake recipe. It is so delicious and tastes just like real cake
I’ve made subtle changes on my original recipe, but these changes have resulted in a seriously delicious cake
In this recipe I’m going to divide the batter to make two smaller cakes. One vanilla and one chocolate
Dividing the batter made better cakes. Usually I need to make the cake ahead and let it set in the fridge overnight, first to remove any eggy taste
And second, making thinner cakes made it hold better and the cake has a great dense texture
Besides, lately I’ve used Steviana sweetener for baking so there was ZERO after taste, so the cake tasted just like the real thing
The cake is seriously delicious so please do give it a try
Here we have 4 whole large eggs + 1.5 tsp baking powder + 1/2 tsp vanilla powder + 1/2 cup Steviana (or a sweetener of your choice)
We’ll also need 1 1/4 cup fine blanched almond flour ( you can use unnblanched if you like, but use fine flour)
100g cold butter cut into cubes
2 heaped tbsp of labneh. You can sub with cream cheese
A pinch of salt
And for the chocolate cake I’ll need unsweetened pure cocoa powder and a dash of cinnamon
to the eggs I am adding the vanilla, baking powder, sweetener, labneh or cream cheese and a pinch of salt
Now just mix to make a batter
Scrap the edges to make sure that everything is well combined
When the batter is well mixed, while the machine is on, drop the cubes of butter one by one
You drop one cube at a time making sure that each cube is well blended before you add the next one
When the butter is all well mixed in the batter, add the entire batch of almond flour and mix

Forgot to mention that you should preheat the oven on 150 C
Now the vanilla cake is ready. If you want to make it into one cake just prepare your cake mold and butter it or live with parchment paper if it is not a silicon mold one
If you are making one entire cake it’ll take between 25 – 30 min in the oven
I’m going to divide it into two cakes. Here I have these silicone molds
Pour in one mold half of the cake batter for the vanilla cake
The other half will turn it into a chocolate cake
Now see how easy it is, to the exact same batter you just need to add 2 tsp cocoa powder and a dash of cinnamon
You don’t need to add more than a dash of cinnamon. you won’t even taste it. It’ll only give your chocolate cake a depth in flavour and warmth
You can add a pinch of coffee granules instead of the cinnamon. It’ll do the same effect
Now just mix
Scrap the edges and continue mixing for few seconds
That’s it. Now pour into the other mold. Or you can even pour it over the vanilla one and make a marbled pound cake
Now I’ll bake them in the middle rack of a preheated oven at 150 C
And because they are thin cakes they will need to bake for only 12 – 15 min in the oven
I just got them out of the oven and it took exactly 13 min to be done
Just let it set for 5 – 10 min before you unmold it
If you follow this recipe you will get a cake that doesn’t fall apart and has zero eggy taste
The cake is cooling down so I’ll show you these ones that I’ve made yesterday.
See how nice it is. dense and moist and a beautiful texture. Very close to Sara Lee pound cakes
Seriously delicious cakes I highly recommend you to try it
It keeps well if kept covered in the fridge. It even freezes very well. Just let it thow on the counter and it will be just as good as newly baked one
