5 NEW Microwave Mug Meals (Mug Lasagna, Donut & More!) Gemma’s Bigger Bolder Baking 114

Hi Bold Bakers! Due to the huge popularity
of my mug meals, I have even more recipes
for you that will cover breakfast, lunch,
dinner, and of course, dessert. My mug meals
are real food, fast made with great quality
ingredients. So let’s get started.
My mug meals take minutes to whip up and even
less time to cook and they are the perfect
single-serving portion. They’re really great
when you need something fast but still homemade.
Starting out with breakfast, we are making
an egg mug muffin. We’re going to start
out in a microwavable mug. Add in your flour,
baking powder, baking soda, and then salt.
And then mix these ingredients together. Into
our dry ingredients, we’re going to add
in some egg, milk, and a flavorless oil like
vegetable or sunflower. And then with a fork,
just mix all of these together. You can even
make this muffin the night before and then
cook it off fresh for breakfast. Once our
muffin is mixed, we’re going to add in some
chopped scallions and some grated sharp cheddar.
And then just lightly mix them in. I love
those two ingredients because I think they
work really well together but if you don’t
like cheese or onions you can leave them out.
Now to add in the egg in our egg mug muffin.
What you want to do is make a little well
in the center, pushing the batter to the sides
and then we’re going to take a whole egg
and crack it straight into the center and
then take the batter from the sides and smear
it on top. It’s ok if some egg peaks out.
And there you have it, an egg mug muffin ready
for the microwave. You will not believe what
this looks like when it comes out of there.
It’s insane. The cooking times that I’ve
given for my mug recipes are based on my microwave,
which is 1200 watts. So check the wattage
of your microwave because your timing may
vary. I told you this recipe would look amazing
and just check that out. It smells fantastic
and you can always tell that it’s done because
you press down on top and it’s nice and
firm. We’re going to decorate this and then
dig in. Oh my gosh that tastes so good. The
cheese and the egg and scallions and the fact
that it’s still warm makes it even better.
I’m not going to fill up on this because
we’ve got lunch coming up next.
So now it’s lunchtime, I’m hungry and
I want something comforting. So we are making
loaded potato soup in a mug. For this recipe,
you’re going to need a large, microwavable
mug. Into our mug, we’re going to add in
small cubes of raw potato. The smaller the
cubes are, the faster they cook. Next, we’re
going to pour over some cold water. Now we’re
going to pop this guy into the microwave until
the potatoes are fully cooked. You’ll know
when your potatoes are done because you can
stick a fork through them and they’re nice
and tender. Now simply drain off the water
and we’re going to add in the rest of our
ingredients. Some chopped onion, cooked bacon,
cheese, and salt and pepper. To thicken our
soup, we’re going to add in some corn flour,
also known as corn starch. And then we’re
going to mix all of the ingredients together.
Now to make our soup, I’m going to add in
some chicken stock. You can use homemade or
store bought. And then lastly, to give our
soup a little bit of creaminess, I’m going
to add in some milk. And then just give it
a quick little mix up. Our homemade soup made
in a mug is ready for the microwave. All of
the recipes for my mug meals can be found

count. I’m really excited about how our
soup turned out. Just look how thick it got
in the microwave. This tastes like a baked
potato with all the trimmings in a mug. It
is incredible. I’m going to take a few more
bites and then we’re going to move on to
afternoon snack.
After lunch, I will usually have a snack.
Now you’ve heard of a duffin and a cronut
but have you heard of a mugnut? Also known
as a jelly donut in a mug. In a microwavable
mug we’re going to add in some butter and
then pop it into the microwave to melt it.
Once your butter is melted, add in your sugar,
egg yolk, and milk, and then mix them all
together. One thing I love about my mug meals
is that they can all be mixed up in the one
mug, also you have very little waste and you
only need a handful of ingredients. To our
wet ingredients, we’re going to add in our
flour, baking powder, and cinnamon and then
gently mix this together with your fork. If
you don’t eat eggs, don’t worry. I’ve
got substitutions in the recipes on my website.
Once your batter is mixed, I’m going to
take a spoonful of jam and place it down right
in the center of our donut. So when it bakes,
you’ll have a jammy center just like a real
donut. Okey dokey, our mugnut is ready for
the microwave. All of my mug meals can also
be cooked in a conventional oven. So check
my website for those instructions. Who even
knew you could make a donut in the microwave,
no fryer, no nothing. I love my donuts with
cinnamon sugar so I’m going to sprinkle
some on top and add on a little bit of extra
jam. Yup, it tastes just like a donut. And
without all the fuss. I really think we’re
onto something here with this donut made in
a microwave. It’s delicious.
So now we’re onto dinner and the last time,
we made mug pizza, which you guys went nuts
for so how am I going to top that? With a
lasagna made in a mug. In a large microwavable
mug, we’re going to add in broken up sheets
of lasagna noodles. Pour over some cold water.
And then add in some olive oil. What the olive
oil does is stop the pasta from sticking together
in the microwave. Now similar to the potato,
we’re going to pop this into the microwave
until the pasta is fully cooked. My pasta
is nice and tender so I’m going to put these
in a separate bowl and I’m going to start
to build my lasagna in a mug. In the bottom
of your mug, add in some pasta sauce. You
can use homemade or store bought. Next, we’re
going to add in a layer of our cooked noodles.
Then on top, we’re going to add in some
fresh spinach. Don’t worry, you don’t
have to pre-cook it, it’ll cook down in
the microwave. On top of that, we’re going
to put on some ricotta, a nice, creamy cheese
layer. Then we’re going to add in some cooked
sausage. Now don’t worry. If you’re vegetarian,
you can leave this out no problem. Now we’re
going to repeat the same layers over again
until we’ve almost reached the top of the
mug. To top off my lasagna, I like to scatter
some grated cheddar cheese on top. All of
these flavors are optional so you just add
in whatever you have to hand in your fridge.
And just look at that, a whole meal, made
in minutes in a mug, ready for the microwave.
It doesn’t get much easier than that. Because
all of the ingredients in here are already
cooked, we’re going to put it in the microwave
and get it nice and hot. Get the cheese melty
and have all of those wonderful flavors married
together. Our lasagna took no time to make
and even less time to cook. Check that out.
All of the gooey delicious cheese. I cannot
wait to try this. This is ready to be enjoyed
so we’re going to finish it off with some
fresh basil. I cannot believe for years I’ve
been making big lasagnas in an oven like a
chump. I cannot wait for you guys to try this
because I know you’re going to love it.
But we’re not going to stop here, we’re
going to move on to the next one.
Now you know I would not forget about the
most important meal of the day, dessert. So
we are making a decadent chocolate pudding
made in a microwave. Into our microwavable
mug, we’re going to add in chocolate, salt,
and corn flour and then mix these ingredients
together. Into this mix, we’re going to
pour in our milk and stir as we add it in.
All we’re trying to do is combine the corn
starch with the milk to give us a lovely,
thick pudding. Lastly, add in some vanilla
and give it a quick little stir. And there
you go, in no time at all, we have mixed up
our chocolate pudding. Now I know this might
not look like a lot now, but wait till you
see it coming out of the microwave. In the
microwave, once this mix starts to heat and
your chocolate melts, you’ll notice your
pudding starting to thicken. You’re going
to go in, give it a nice whisk around and
then pop it back into the microwave to thicken
up even further. Just like I promised, decadent
chocolate pudding made in a microwave. To
finish off my chocolate pudding, I have to
add some freshly whipped cream on top and
some grated chocolate. This is absolutely
gorgeous. It’s still a little a bit warm,
it’s so thick and decadent. This is my kind
of dessert, big and bold. Whether you’re
