4-ingredient Vegan Banana Almond Cookies

this is a very easy one it is okay remember you could don’t think like you’re trying to solve world hunger this is just a dad joke all right can you tell me why bananas wear it wear sunscreen why do bananas wear sunscreen that’s the question ah there we go there finally mmm Jesse finally got one we’re excited about but Jesse’s doing that’s really good yes sir what up guys and welcome back to the pinnacle kitchen for today’s quickie recipe video we are going to be reimagining cooking in a much more calorie conscious nutritious and but very sweet way so today’s challenge involves using food to actually sweeten up a cookie you’re like Kevin that already exists yes I know that already exists but we’re gonna be doing it here within the fitmin cook kitchen in a much more calorie conscious way but also a really minimal way but literally just less than five ingredients we’re gonna be using some banana almond flour a little bit of olive oil and some baking powder to make the most amazing cookies you’ve ever had I promise they may not be as good as your mama’s a Yankee or your grandmom’s but they are a really close second but the best thing about them is is that it’s a really minimal recipe and we’re using the sweetness of a ripe banana to sweeten up the cookie so this will teach you how food pairs together and how it tastes in its natural form whenever it’s baked so that way you always don’t have to rely on adding in copious amounts of other things like salt and sugar to your food so this is a great learning recipe that you can build on but just make this base and I can guarantee you will be happy so if you’re ready to roll up your sleeves for these amazing four for four ish ingredient cookies then let’s get started alright the first thing we’re gonna do is make our batter so I’ve got some superfine almond flour here make sure that you get super fine almond flour and not you know totally different then I’m gonna add a little bit of baking powder and stir everything together and just one final note here on the almond flour I like to actually weigh mine to measure it out so I weighed mine out so when you follow the directions make sure that you are doing it with an actual measured portion I’m gonna grab some bananas the bananas are gonna provide the sweetness for this recipe so I’ve got a half a banana right there you know food waste and then I’m gonna add this giant one here take our fork just mash this up make sure that you’re using the right bananas this part is really important because this right here this is the sugar for our recipe and one final thing I like to add in just a little bit of olive oil it’ll help with the overall consistency give us a quick mix now we’re going to add in the almond flour in the baking powder with those forearms you can bump up the flavors too you can add in a little bit of vanilla extract if you’d like to it’s really easy to customize just make sure that it’s calorie conscious whatever you do actually gonna grab a baking tray lined with some parchment and let’s put in our cookies now you can use a tablespoon I like to use an ice cream scoop because it keeps it much more uniform you make sure that you’re giving them adequate space room to breathe you know we can always boost the flavors just a little bit so why don’t we add some toppings to these so to this one I’m gonna add in some stevia-sweetened dark chocolate but goes right on top and maybe with these two over here we can do like a birthday cake theme all those on the top and then just gently Pat it now and then for this one back here I got a little bit of coconut sugar and some cinnamon why don’t we just sprinkle the top of this one and then these up here we’re gonna leave plain because again these are good as is but I want to show you how easy it is to customize so we’re gonna bake this in the oven for about 15 18 minutes at 350 and literally after 15 minutes there we go delicious vegan banana almond cookies they look amazing right it’s so simple remember that nature itself is sweet and it can flavor and season and sweeten our food naturally so this is a great example of that I know you’re gonna love these cookies all right now the part that I live for I’m gonna take one of the plain ones mmm the outside is a little bit crunchy but the inside is great pillowy oh my gosh I love it these are like cake cookies look at this can you add some more sugar in there yes can you add some honey what’s the Maga they absolutely but it’s sweet enough for this purpose right here and that’s what I want you to do I want you just to try it out just bake the base recipe first add your own toppings there but just experience you know nature sweetness of a cookie I think it’s just a beautiful thing I want you to
