3 Ingredient Berry Egg Muffins! Mind Over Munch Kickstart 2016
Hey my munchies! Today I am sharing a
super easy recipe. It’s only got 3
ingredients and it’s great for a quick
snack. These egg muffins are sweet not
savory and you can customize them as
you’d like. For this recipe you will need
bananas, eggs, and raspberries or any
berries that you prefer. Thumbs up for
three ingredients. In a large mixing bowl
add in your peeled bananas and mash them
up with a fork. If you have a masher
that will work just as well but I find
the fork a little bit easier to use. The
more ripe your bananas the better. Once
the bananas are yellow with dark spots
the starch is converted to sugar and they
will be much sweeter and easier to work with.
Once mashed we’re going to add in our eggs
and whisk well to combine. If you use
less ripe bananas you may want to add a
little bit of sweetener to this recipe.
Spray down a mini muffin tin and place
just a couple of berries into each cup.
Then use a scoop to spoon your banana
egg mixture over the raspberries and fill up the cup.
Tap down the muffin tin to
get rid of any air bubbles and then
transfer to an oven preheated to 375
degrees Fahrenheit for about 12 minutes.
Remove from the oven and allow to cool
slightly before taking them out and
devouring. Look at that perfect little
muffin. So cute! At first I was worried. I’ve
tried the infamous 2 ingredient banana egg
pancakes before and didn’t have great
success with them. It was more like a
banana omelet. But these actually tastes
sweet and have a little bit of a muffin
texture without any flour at all. So cool.
