so yeah you could go to the liquor store
and buy one of the name-brand coffee
liqueurs off-the-shelf take it home
mix all the drinks that you want but if
you make it at home you can play with
the flavour a little bit and you can make
it your own you can really make this
part of your signature cocktails first
off you’re going to need an over proof
rum we’re using the cardi 151 which
clocks in at about seventy five and a
half percent alcohol you’re going to
need a dark roast course ground coffee
half a vanilla bean half of a cinnamon
step two to three cocoa nibs and one
slice of orange peel sometimes the
orange peel can be overpowering so you
might want to cut back on it a little
bit this is where you know you can play
with it and make it your own
pretty much here’s the process first
thing you want to do is slice the
vanilla pod in half and then scrape out
the beans inside take both of those and
put them into your mason jug next thing
is the coffee pour that into the jug as
well and you know we don’t even grind
our coffee we just sort of mash it up a
little bit in a in a mortar and pestle
next thing is add in the rub for the rum
in put the lid on give it a shake leave
it on the counter overnight 24 hours or
so after that 24 hours is up you want to
add in the rest of the ingredients so
throw in your cinnamon stick take your
towel nibs and again in a mortar and
pestle just sort of grind them up a
little bit occupying is pretty much
water just crack them up and throw those
into the mason jar finally put in your
orange peel again might not want to put
in a full slice of orange peel kind of
play with it a little bit you’re going
to find your sweet spot once that’s in
the jug put the lid on give it a shake
leave it on the counter for another 24
hours or so
at the end of the second 24 hour period
you want to strain out solids and you
really want to strain them clear you
don’t want any sediment in your liquor
so we double stacked two coffee filters
and strain through that don’t press down
on it just let gravity take its course
once you strand out you’re going to get
about 350 milliliters of coffee infusion
and to that you want to add simple syrup
now we don’t like ours to climbing Lee
sweet so we don’t add a whole lot of
simple syrup and one of the things that
helps it not be too cloying Lee sweet is
we use that overproof rum at the
beginning so the overproof rum helps you
extract all of the goodness out of those
ingredients but it also keeps it from
being too syrupy on your palate really
gives it a nice finish so we usually
start it with about 120 milliliters of
simple syrup pour that in and give it a
stir give it a taste and maybe you might
want to add a little bit more so if you
do pour a little bit more in give it
another taste figure it out and that’s
it that’s all it takes to make coffee
like here at home this is great in black
freshens this is great in White Russians
this is great on the rocks just sitting
on the porch on a summer day hope you
enjoy see you again soon
