Let’s make vegetable stock first.
Onion skin is rich in nutrients. so I’ll use it
Do not use moldy onion skins.
Add carrots and celery to the stock.
Put the vegetables in a pot and pour water.
In this recipe, 700 ml of stock is required.
I forgot the pepper and put it later.
Boil the stock on high heat first, cover it with lid and boil for 20 minutes on medium heat.
I’m going to make risotto with konjac rice to reduce carb.
Konjac rice is sifted and soaked in water with vinegar.
Soak in vinegar water will remove the bad smell of konjac rice.
Only dust off the mushrooms. Never immerse in water.
Since mushrooms absorb water, soaking it in water makes it taste bad.
Cut it small to match other ingredients.
Mushrooms do not need to be cut very small, as they become smaller when cooking.
Cut the onions into small pieces.
Fry the mushrooms until golden.
Put the onions in the pan you fried the mushrooms and fry.
I used half polished rice.

Pour the vegetable stock and keep stirring.
If you keep stirring, you can make creamy and sticky risotto.
Of course, the type of rice is also important.
Fully polished rice is more sticky.
Stir well enough to soak vegetable stock in konjac rice.

Add a lot of ground cheese to the risotto for a sticky texture.
