Keto Magnum Chocolate Ice Cream Bar
Will show you how to make the ice cream
Any whipping cream of your choice
500 ML of whipping cream will make a good amount of ice cream for the family
You can use any blender or food processor or even whip by hand
Add 1/2 cup of sweetener
I used Steviana
This is the vanilla powder I like to use
It is not a natural vanilla but it’ll give you the same vanilla taste of the commercial ice cream
add in a good pinch of vanilla
Now … That would be it if you want vanilla ice cream
But today I’m making chocolate ice cream
I’ll use this pure unsweetened cocoa powder
3.5 heaped tsp
Now just whip them up
Just make sure to scrap down any cocoa powder that has clinged to the edges
In this time it is a good idea to taste the mixture to make sure that you like the taste so you can adjust according to taste
it seems it needs more cocoa powder
NOTE: I have mixed up my cocoa powder measurements
It is NOT 3.5 tsp of cocoa powder. In fact it needs 3 – 4 tbsp of cocoa powder
So I added more cocoa powder and fixed the ratio and continued the whipping (sorry about that)
Do NOT over whipp
You can store this ice cream in a tub or individual small containers
If you want this to be like a frosty soft scoop ice cream you can leave it in the freezer for just about an hour
I’m going to use the ice cream molds
I’ve filled the molds with the ice cream. But the ice cream is too thick to fill in this type mold
This type of mold works better for this ice cream
I used the espresso size paper cups to fill in the rest of the ice cream to make individual portions
Such a small portion of this ice cream is just enough because it is very very rich and dense
I’ll just apply the sticks right away and it’ll stay put because the ice cream is too thick
Now just put these ice cream in the freezer for few hours
Now I’ll show you how to make the chocolate hard shell for the ice cream
In this cup I added 2 squares of chopped dark chocolate. I used 90%
I added a small amount of sweetener so the chocolate won’t be too bitter
For each 2 squares of chocolate you’ll need to add 1 heaped tsp of coconut oil
Then microwave it till it melts and becomes a sauce
It took me 30 seconds to melt nicely
If it didn’t melt completely with you just microwave it for few seconds more
You can add any type of nuts you like
Just chop up any nuts you like
Personally I like using roasted and salted almonds or peanuts
The strong roasted flavour and the salt will contrast the sweet rich ice cream which will give you a divine flavour contrast
The ice cream is well frozen. Just got them out and I’ll dip them in the sauce right away
The sauce literally takes seconds for it to harden and create a hard shell over the ice cream
I’ll make a plain one too
If you like a thicker crispy chocolate layer, dip them once then return to freezer for 1 minute then dip them again
Look at this first one i made it already hardened and ready. It takes no time
These are the ones I used the espresso paper cup to mold
I’ll use the knife to help release the ice cream
Please do a better job in filling the molds than me
* My niece wants it dipped in the plain chocolate sauce
Looks like Harry Potter’s Sorting Hat
Look at them all hardened and ready to be consumed right away
For the hard shell: 2 dark chocolate squares + 1 heaped tsp coconut oil + a little sweetener
For the Ice cream : 1/2 liter whipping cream + 1/2 cup sweetener + 4 tbsp cocoa powder + a dash of vanilla
The entire ice cream batch contains: Cal 1.864 / 15g Protein / 178g fat / 22g Net Carb
